Combine the warm water, yeast, melted butter, salt, and sugar in a large bowl. Stir and let the yeast bubble for 5 minutes.
Stir in the flour. This will form a dough.
Fold the dough on a clean surface and then knead the dough for 5 minutes.
Put the dough back into the bowl, and cover it with a clean towel. Place the bowl in a warm setting in your kitchen, and let the dough rise until it has doubled in size. This will take about 15-20 minutes.
Preheat the oven to 475 degrees.
Line the baking sheets with parchment paper.
Add 4 cups of water to a pot on the stove and let it boil. Add the baking soda and dissolve. Take off the heat and let it cool until the water is warm.
Take the dough and divide it into 8 pieces, then roll them into 1-inch thick ropes.
Grab a sharp knife and cut the ropes of dough into 1 1/2-inch long pieces.
Put the pieces into the warm baking soda water and let them set for 2 minutes.
Add the pecans to a blender and blitz them until they are well-ground. Stir in the sugar.
Melt the coating butter, dip the bites into it, and then roll them in the sugar and pecan mixture.
Put the coated bites on the baking sheet and bake for 8-10 minutes or until golden brown.
