Instructions
Preheat the oven to 350 degrees. Add the cupcake liners to a cupcake pan.
Put the cake mix into a bowl and then add the eggs, oil, and water. Mix on medium speed. Fold in the coconut.
Add the batter into the liners 2/3 of the way full.
Put the pan in the oven and bake for 18-20 minutes until the toothpick comes out clean.
Let the cupcakes cool before adding the frosting.
To make the frosting, add the butter to a bowl and beat for 2 minutes until light and fluffy.
Add the vanilla and then slowly add the powdered sugar 1 cup at a time. Add a little bit of the sparking water in between each cup of sugar and mix for 1-2 minutes until stiff peaks form - but don't overmix!
Add the frosting to a piping bag and frost the cooled cupcakes. Sprinkle coconut on top, add a cherry, and a paper umbrella. Enjoy!
