Chocolate Ganache
6ouncessemi-sweet chocolate bar
¼Cup(s)of heavy cream
½teaspoonof vanilla extract
½Cup(s)of crushed peppermint candies
Instructions
Start by creaming together the sugars and butter together.
Add in the egg, egg yolk, peppermint, and vanilla extracts. Mix well.
Next add in the cocoa powder, flour, baking soda, and salt. Mix until combined.
Put parchment paper on your baking sheet and start making balls of out the cookie dough. Using 2 tablespoons of dough for one cookie will be bigger cookies. Roll the dough into 1/2 cup sugar and put on a cookie sheet.
Use your thumb to make an indent in the middle of the cookie.
Chill them for 30 minutes.
Preheat over to 350 degrees.
Bake cookies for 4 minutes. Rotate, then bake for another 4 minutes. If the indent pops out, make it again with the back of the spoon.
Cool in the pan for about 10 minutes. Move to wire rack.
Chocolate Ganache
Put the chocolate, cream, and vanilla extract into a microwave-safe dish. Then put it in the microwave in 15-second increments, until it is melted. Stir after each stop. Chill to let thicken up.
Once chilled, whip it with a mixer until light and fluffy.
Pipe or spoon the ganache in the middle of each cook and sprinkle on crushed peppermint.
