2Tbspfresh thyme leaves + additional sprigs for garnish
Instructions
Preheat the oven to 400 degrees. Put the oven rack in the center of the oven. Add parchment paper to a baking sheet.
Whisk 1 T of the olive oil with the orange zest, orange juice, honey, and mustard. Add the salt and pepper and stir.
Rub the orange glaze all over the pork loin, coating it on all sides. Place the meat in the middle of the sheet pan and set it aside.
Toss the carrots, beets, and onion with the rest of the oil ad thyme leaves. Season with salt and pepper. Spread the veggies around the pork in a layer and avoid overcrowding.
Place the sheet pan in the oven and roast for 25-30 minutes or until the pork reaches just above 140 degrees and the vegetables are fork-tender. (145 degrees is the recommended temperature for safe cooking for pork, and the internal temperature will rise a few degrees as it rests)
Take the pan out of the oven and closely cover with aluminum foil. Let the meat rest for 5-10 minutes.
