Instructions
Line your muffin pan with cupcake liners.
Crush the graham crackers and add the crumbs to a bowl. Add the melted butter and black food coloring. Stir until it resembles sand.
Add a heaping tablespoon of graham crackers into the liners and press into the bottom.
In a stand mixer bowl, add the softened cream cheese and sugar. Cream until smooth.
Add the vanilla and heavy whipping cream. Cream on medium for 1 minute, then scrape the sides and mix for another 30 seconds.
Pour the cheesecake mixture into the muffin cups to the top of the cupcake liner. Put the pan in the fridge for 2-3 hours to set.
Once done, top with the decorations.
Melt the chocolate by combining the chocolate and heavy cream. Heat in a microwave-safe dish for 30 seconds, stir well. Then head for another 15 seconds at a time and stir between each interval until smooth. Put the chocolate in a piping bag.
