Add the sprinkles to the bottom of the mold. Make sure to cover the entire bottom.
Add the baking chips, 1/2 tsp extract, and 1 tsp coconut oil to a microwave-safe bowl. Heat in 30-second spurts at 50% power, stirring between each. Do this until melted and smooth.
Add the melted chocolate to each mold, using a spoon.
Place the mold in the freezer until hardened. Pop out the chocolates and enjoy!
