Ingredients
2lbsripe but firm fresh peaches peeledpitted and cut in chunks
2Tbspflour
½tspcinnamon
¼Cup(s)sugar
2tsplemon zest
Topping
¾Cup(s)all-purpose flour
¼Cup(s)cornmeal
¼Cup(s)sugar
1tspbaking soda
¼tspsalt
½Cup(s)Silk soy almond or coconut milkany flavor except light or chocolate
4Tbspcanola oil or melted unsalted butter
1Tbsplemon juice
1-2Tbspsugar to sprinkle on top
Instructions
Preheat oven to 375°F.
In a bowl, combine the peaches, 2 Tbsp flour, cinnamon, sugar and lemon zest.
Place in a buttered 10-inch pie pan or round baking dish.
Bake for 10 minutes.
Make topping: In a large bowl combine 3/4 cup flour, cornmeal, sugar, baking soda and salt. In a separate bowl, whisk together the Silk, canola oil (or butter) and lemon juice.
Pour the wet mixture into the dry and mix gently with a spatula, stirring only until combined.
