Instructions
Preheat the oven to 400 degrees. Add a metal rack onto a rimmed baking sheet.
Add the almond flour, garlic powder, onion powder, smoked paprika, and Italian seasoning into a bowl. Season with salt and pepper. Set aside.
In a different bowl, whisk the eggs and water until frothy. Set aside.
Add the grated Parmesan cheese to another bowl and set it aside.
Dredge the zucchini fries into the almond flour mixture, followed by dipping them into the egg mixture. Let the excess drain into the bowl, then move to the Parmesan cheese bowl. Turn to coat the entire fry and then place on the rack on the baking sheet. Add more salt and pepper if you want.
Put the baking sheet into the oven and roast until crispy and golden. This will take about 20-25 minutes. Flip the fries halfway through the baking process.
Mix the olive oil, garlic, oregano, red pepper flakes, and tomato paste in a saucepan over medium-high heat as the zucchini is baking. Cook and stir frequently until you smell the garlic. This will take about 1-2 minutes. Season with salt and pepper, then stir.
Reduce the heat and add the crushed tomatoes. Cook until the mixture is bubbly and slightly reduced. This will take about 8-10 minutes.
Take the pan off the heat and stir in the parsley and fresh basil. Pour int a serving dish and keep it warm.
Once the fries are done cooking in the oven, remove them and serve with the homemade marinara sauce.
