3teaspoonsrubbed sageuse 2 teaspoons if your sage is finely ground
2teaspoonsgarlic powder
1teaspoononion powder
Instructions
Measure the thyme and sage into a small bowl. Rub them between your fingers as they go in to break up the leaves and wake up the flavor.
Add the garlic powder and onion powder and whisk until the color is even and there are no clumps.
Spoon the blend into a small airtight jar, label it with the date, and store it in a cool, dark cabinet.
Notes
How much to use: start with about 1 teaspoon per pound of chicken, pork or turkey, or per sheet pan of vegetables, and add salt and pepper separately since the blend has no salt.Storage: airtight and away from the stove, it tastes best within 6 months and keeps up to a year. If it no longer smells strong when you rub a pinch, make a fresh batch.Bigger batch: the ratio is 3 parts thyme, 3 parts sage, 2 parts garlic powder, 1 part onion powder, so use tablespoons instead of teaspoons for a jar that lasts all season.
