A candy apple mocktail tastes like the caramel coating on a fair apple, in a glass. Spiced apple cider and caramel syrup make the base, ginger beer adds the fizz, and a caramel rim does the rest. It takes five minutes and has zero alcohol.
Spread the caramel sauce on a small plate. Turn the glass upside down and press the rim into the caramel, giving it a little twist so it coats evenly.
Fill the glass with ice.
Pour in the caramel syrup and spiced apple cider and stir for a few seconds to mix.
Top with the ginger beer and give it one gentle stir so you keep the fizz.
Garnish with apple slices and serve right away.
Notes
For a party pitcher (8 drinks): Stir 1 cup caramel syrup into 3 cups spiced apple cider and chill. Add 1 1/2 cups ginger beer right before serving. For kids who don't like spice: Swap the ginger beer for ginger ale or sparkling apple cider.Nutrition is an estimate and includes the full tablespoon of caramel sauce for the rim.
