Starting with your brie cheese wheel, place it on a piece of parchment paper and use your round cookie cutter to cut out a smaller circle. Put the smaller circle to the side to use later.
Next, take the outer circle of the brie and cut it in half. Then cut it into two smaller pieces, about 3 inches when flattened, and place the rest to the side.
-Line the two smaller strips up and cut the edges of the strips diagonally on both sides so they can look like bunny ears. If the bottom of the strips is uneven you can slice them across to make them even in length.
Move your brie off the parchment paper and place them in a cool, dry place.
Now place your block of cheddar cheese on the sheet of parchment paper. Cut your block in half.
Cut one of the halves into thirds and then one into three cubes. Repeat this until all the rest of the cheddar cheese blocks are cubed. Save them for later.
Using a clean sheet of parchment paper, grab your strawberries and cut them in half.
Now take your salami and cut the slices in half. Move them to the side but make sure it's not in a cold place. The salami should stay at room temp or warm to make it easier to work with.
Grab your clean cutting board and brie cheese pieces.
Place the two bunny ear-shaped strips about an inch from the top of the cutting board, move them about a quarter inch apart, and then place the circle over the bottom of the strips.
Next, get your salami halves on parchment paper or a cutting board. Fold the salami in half and press down on the fold.
Roll up the folded meat, turn it upside down, and tuck the end inside the hole. Turn the rolled salami over and squeeze the bottom to stay secure.
Place the meat on the cutting board about an inch under the bunny’s head and repeat the same steps until all the meat is rolled and bunched closely together.
Bring your cheddar cheese, grapes, and strawberries close to your board
Put the cheddar cheese cubes closely around the meat. This will help the rolled meat stay in place. Also, put some extra cubes close to the bunny’s head.
Now place your green grapes around the cheese cubes and the purple grapes around the green grapes.
Take two strawberry halves, and place them right below the bunny’s head on top of the cheddar cheese cubes. Turn the bottoms of them to face inward so they will look like a bowtie.
Bring your mini chocolate eggs, candied peanuts, and crackers close to your board.
Randomly place your mini chocolates and peanuts around the fruit and cheese.
Next, take some of your crackers and layer them on top of each other one by one going in a circular motion in the upper corner of the board.
Use the extra pieces of brie you have left over to place around the grapes to emphasize the bunny’s body.
Lastly, spread neatly throughout the board by using some of the extra mini chocolate eggs, candied nuts, strawberries, and grapes.
Notes
-Leave your extra crackers off the board for a neater look. Just replenish them after the initial crackers are eaten.-In case of any allergies, leaving out the peanuts won’t affect the taste or look of the board. Substitutes like seeds or small pretzels can replace the crunch element.-Make sure the salami is room temperature or a little warm, which helps the meat stay together after rolling and squeezing it.-It's best to cut the cheese while it's a bit cool to have cleaner edges.
