2Cup(s)mashed ripe bananasabout 2 medium bananas + 1 whole banana
2Cup(s)all purpose flour
⅔Cup(s)packed brown sugar
⅓Cup(s)molasses
½Cup(s)olive oil
½Cup(s)whole milk
¾Cup(s)old fashioned oats
½Cup(s)chopped dates
½+ 1/8 cup chopped walnutsor any type of nuts
2eggs
1tspbaking powder
½tspbaking soda
½tspsalt
1tspground cinnamon
½tspnutmeg
Instructions
Preheat the oven to 350 degrees.
Spread the oats onto a parchment-lined baking sheet, and bake for 6-8 minutes. (or until golden)
Mix the sugar, milk, oil, and eggs in a bowl.
Stir in the oil and molasses.
Add the mashed bananas and mix. (remember to leave 1 whole banana out for later)
Add the flour, baking soda, baking powder, cinnamon, salt, and nutmeg. Stir.
Add 1/2 cup of the chopped walnuts and stir. (leave some for topping)
Add the chopped dates and stir.
Blend 1/2 cup of the oats that were toasted in the oven. (leave 1/4 cup for topping)
Add parchment paper to the loaf pan and then spray with a nonstick spray.
Pour the mixture into the prepared loaf pan.
Slice the banana lengthwise and as thin as possible. Put the slices on the top sides of the loaf and then sprinkle the top with leftover walnuts and oats.
Put the pan in the oven and bake for 60 minutes. Start checking on the bread around the 50-minute mark.
Let the bread cool for 10 minutes, then move it to a wire rack.
Notes
If you don't want to use molasses, you can increase the packed brown sugar to 1 cup.
