Simple Carrot Salad

Ingredients

  • 1 pound carrots peeled
  • 2 teaspoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1-2 teaspoons honey to taste
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 2 finely sliced garlic cloves
  • 1 teaspoon zatar optional

Instructions

  1. Shred the carrots and place in a large container.
  2. Add the remaining ingredients and stir well. Cover and refrigerate overnight.
  3. Remove the garlic and replace any wilted parsley.
  4. Add the zatar if using and serve.
