I always have a small (to me) garden during the summer months and I always overplant my zucchini. I give it away to friends and family and still have tons of leftovers! We love eating fresh vegetables every night so this grilled zucchini is a tasty recipe to use it up.

Slice your fresh zucchini less than 1/2″ thick. You don’t want it too thick because it will take longer to cook or to thin because it will burn and no one likes burnt veggies!

Ingredients

– 2 large zucchini, sliced – ½ tablespoon olive oil – ½ teaspoon garlic powder – ½ teaspoon salt – ½ teaspoon pepper

Preheat George Foreman grill while you prepare the zucchini for cooking

In a large bowl, combine the zucchini, olive oil, garlic powder, salt, and pepper. Toss until the zucchini slices are evenly coated with oil and seasoning.

Place the zucchini in a single layer on the grill and close the lid.

Cook for five minutes, until the slices are cooked through
