Southern Mom Cooks is sharing a special recipe to get all of you inspired for the The Tailgater of the Year Contest! Bacon Chicken Ranch Bites are the must have snack on game day! Chunks of chicken are stuffed with cream cheese, minced jalapeno and Hidden Valley Ranch seasoning; then wrap chicken in bacon! Bake the Bacon Chicken Ranch Bites for 35 minutes and then serve with KC Masterpiece BBQ Sauce. These tasty bites are a touch down recipe!
Bacon Chicken Ranch Bites
4 chicken breasts, cut into cubes
8 oz reduced fat cream cheese, softened
1 jalapeno, seeds and rubs removed, minced
6 oz Hidden Valley Ranch seasoning packet
1 lime, juiced
Dash of salt
8-12 strips of bacon
KC Masterpiece BBQ Sauce
1. Set oven to 375 degrees. Cut chicken into cubes. Make a slit in the middle of each chunk so you’ll be able to stuff the cream cheese mixture into each piece of chicken.
2. In a mixing bowl, add cream cheese, minced jalapeno, Hidden Valley Ranch seasoning, lime juice and salt. Using a hand mixer, whip cream cheese mixture until well combined. Scoop mixture into a piping bag. Pipe the cream cheese into each chunk of chicken. Take a slice of bacon (that’s been cut to fit around the chunk) and wrap it around chicken. Secure with a toothpick.
3. Line a baking sheet with tin foil. Place a wire/baking rack on top of the baking sheet. Place the bacon wrapped chicken on to the rack and bake for 30-35 minutes. Let the bites slightly cool before serving. Serve with KC Masterpiece BBQ Sauce.
4. If you want to take these bites to a tailgate, bake them as directed and store in an airtight container. At the tailgate, warm them up on a grill. (I like to use a vegetable basket.)
