The Easy 3 Minute Breakfast Sandwich

Prep Time: 3 minutes
Cook Time: 10 minutes
Total Time: 13 minutes

Bacon, Egg, and Cheese Muffin recipe

Ingredients

  • 1 egg or ¼ cup egg beaters
  • 1 tbsp. bacon bits
  • 1 English muffin
  • 1 slice of your favorite cheese cheddar is good!

Instructions

    In a small skillet over medium heat, scramble the egg and bacon bits.
    Slice and toast the English muffin. Fill it with all the ingredients.
    Wrap in aluminum foil and eat on the go.
    For added flair, add 1 tsp. chunky salsa. Or if you have a sweet tooth, try adding 1 tsp. of your favorite jelly or preserves.

I used to make something similar for my father. The last couple years of his life, Parkinson's Disease made handling flatware difficult, so finger food was his choice to prevent embarasment in front of other people. The homemade version that was his favorite used waffles, homemade (ahead of time/leftover&frozen) or Eggo/other brand frozen/toaster waffles instead of toast, bagel or english muffins. Somedays, he preferred it as an open face sandwich. Other times he didn't want eggs, but peanut butter with jelly or sliced fruit spread on the warm waffle. Or breakfast sausage link topped with applesauce (or pie filling) in a hot dog bun.
