Saucy Parmesan Chicken

In our house, we eat Chicken recipes more nights than anything else.  Seriously, we should have feathers. LOL!  Although, I am a big casserole kind of person, I like to break out the Saucy Parmesan Chicken every so often to spice things up and I get praised MAJORLY!  The Zesty Italian dressing gives the chicken such a moist consistency and the Parmesan gives the outer edge a nice crust and my guys just eat it up.  I made ten pieces last night and we ran out within minutes!  Thank goodness I also made a TON of potatoes to fill them up. 🙂

Saucy Parmesan Chicken

We like to serve this chicken dish with Onion Mashed Potato Casserole and green beans.  The marinade and drippings go great over these potatoes!  After eating, we scrape the remaining marinade into the left-over soup container to add some zesty to our next pot of soup!

Saucy Parmesan Chicken

Prep Time: 35 minutes
Cook Time: 35 minutes
Total Time: 1 hour 10 minutes

The Zesty Italian dressing gives the chicken such a moist consistency and the Parmesan gives the outer edge a nice crust!

Ingredients

  • 4 small boneless skinless chicken breast halves 1 lb
  • ¼ cup Light Zesty Italian Dressing
  • ¼ cup grated parmesan cheese
  • 1 T Minced Garlic
  • 1 T Teriyaki Sauce
  • 1 T Worcestershire Sauce
  • Salt pepper

Instructions

    Place all ingredients, except cheese, in a large resealable bag; seal bag. Turn over several times to evenly coat chicken with dressing.


    Refrigerate 30 min to marinate, laying bag flat so chicken pieces do not overlap in bag.


    Preheat oven to 425 F.


    Remove chicken & marinade from bag. Arrange Chicken in baking dish, cover with Parmesan.


    Bake 35 minutes, or until cooked through

I'll bet this is good. I never would have thought to use the Italian dressing as a marinade. Thanks for the idea. :)

Oh we use Italian Dressing as a marinade on quite a few things - it is SO delicious :-)
