stinking easy to prepare and people always go nuts over it. I’ve been making it for years.  This is like a queso, but we have always called it Rotel Dip, so that is the name I am using here. 🙂

This recipe uses the mild Rotel diced tomatoes but you can always kick it up a notch with the medium or hot versions.

My 3 boys have big appetites so I like to make hearty dishes that will fill them up. This rotel dip recipe is great for summertime cookouts, football parties, or just because.

How do I store this easy appetizer?

The great thing about this cheesy dip is that it’s made using simple ingredients that are easy to store. Once the easy dip recipe is served, and cooled down, add the leftovers to an airtight container and store them in the fridge.

You can. If you want to change up the recipe for this best Rotel cheese dip, go for it. You can use cooked ground turkey, cooked spicy sausage, cooked ground sausage, or even cut down on some of the fat content of the beef by choosing to use lean ground beef.

Rotel is a very southern USA dish.  Many other parts of the world have never even heard of Rotel, much less Rotel cheese dip with ground beef.  So, when it i brought up or when people find it on my site, they always have a few questions.

What is Rotel?

It is almost like salsa. It is simply a canned food that you can buy to use as seasoning in many delicious dishes. It is diced tomatoes and green chilies in a can.

What does Rotel mean?

According to the Rotel website:

Carl Roettele and his wife open a small canning plant in Elsa, Texas, processing over 25K cases of vegetables a year. The product they’re proudest of is their tomatoes and green chilies. Worried people couldn’t spell or pronounce “Roettele,” Carl used the name RO*TEL. Soon, his zesty tomatoes and chilies graced the tables of public figures and politicians throughout Texas.

What goes with a Rotel cheese dip with ground beef?

Because this is an appetizer that we eat as a meal, it can go with most anything.  For a fun Taco Tuesday kinda of idea, stick with the Tex Mex theme and serve it with Tacos, Nachos, and/or Quesadillas.

How much Rotel to Velveeta?

I have found that the best ratio is 2 pounds of Velveeta to 10 ounces of Rotel.

What to serve with your Rotel dip?

This cheese dip is so versatile that you can really serve it with nearly anything. We especially love it with tortilla chips, but the possibilities are endless. It is good with celery. You can’t go wrong with corn chips, like Frito’s Scoops.  Crackers, especially butter ones like Ritz are super yummy dipped in this.  Serve it on a hot dog for a delicious, cheesy dawg! Pretzels are great with this dip.  As I said, the possibilities are endless!

How to make a Rotel cheese dip with ground beef on the stove?

You would do it the same way as in the microwave, except that you would slowly melt the Velveeta Cheese on medium heat. You want to melt the cheese, not burn it or cook it.  Then, you would remove it from the heat before adding in the hamburger meat.
