Easy Tortellini Salad Recipe with DIY Dijon Vinaigrette

This Tortellini Salad with Dijon Vinaigrette Recipe is so easy to whip up that our kids can do it.

Personally, I love recipes that can be made ahead of time.  As a super busy Mom of 3 boys, they are my lifesaver for most meals and events.  What about you?

Tortellini Salad Recipe

Make it a Meal:

Since this Tortellini Salad is much cooler and lighter, it can pair very well with heavier sides and/or main dishes. 

You could even throw some sunflower seeds and bacon pieces into it to make it a complete meal on its own.

Tortellini Salad Recipe

Easy Tortellini Salad Recipe with DIY Dijon Vinaigrette

Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

This salad is a light alternative to heavy, mayo-laden pasta side dishes.

Ingredients

  • Tortellini Salad:
  • Dijon Vinaigrette recipe below or similar bottled dressing
  • 1 lb. 3-Cheese Tortellini
  • 2½ cups Fresh Broccoli chopped
  • 3 medium Tomatoes seeded and chopped
  • 1 Green Onion chopped
  • Dijon Vinaigrette:
  • 3/ 8 cup Canola Oil
  • 3/ 8 cup Balsamic Vinegar
  • ½ cup Dijon Mustard
  • ¼ cup Half and Half
  • 1 tsp. Dried Italian Seasoning
  • 1 clove Garlic minced

Instructions

    Tortellini Salad:
    Cook pasta until almost al dente, about 7 to 8 minutes. Add broccoli to pot with pasta and cook just until pasta is al dente, about 1 minute more. Drain immediately.


    Rinse pasta and broccoli in very cold water until completely cooled. Drain thoroughly.


    Combine pasta and broccoli with rest of vegetables in large bowl.


    Prepare vinaigrette according to recipe. Add to pasta and vegetables, reserving 1/ 3 cup. Toss to coat.


    Chill overnight.
    Bring to room temperature before serving and drizzle with reserved vinaigrette.


    Dijon Vinaigrette:
    Pulse in blender or whisk until thoroughly combined
