Easy Chicken and Broccoli Casserole The Kids Love

This Chicken and Broccoli Casserole is so simple and easy to make ahead, then just pop in the oven. The kids love it and that is what matters most!

But really, the magic is in the fact that I don’t have to make much else to turn this hearty casserole into a meal. I have so many other great Easy Casserole Recipes!

Seriously, there’s chicken, cheese, rice, and broccoli in this casserole dish, so you don’t have to make a side or put anything with it. Just drop this casserole on the table, maybe add a roll or some bread, drinks, and dessert.

How to Make Chicken and Broccoli Casserole

Cook your rice, boneless skinless chicken breasts or tenderloins, and frozen broccoli florets.

Preheat the oven to 350 degrees and prepare your baking dish.

In a large bowl, add the broccoli, chicken, cooked white rice. Then dump in the condensed soup of choice–I’ve used cream of broccoli, or cream of mushroom soup, or even cream of chicken soup, you just need soup. And add 1/2 of the cheese.

To make this chicken casserole go just a little further, you can add 1/2 cup stuffing mix and everything the stuffing calls for (water or butter, whatever).

Stir it all together and top casserole with remaining cheese.

Cook in the oven at 350 degrees until cheese on top is melted, about 15 minutes to 20 minutes.

Top with salt and pepper or even a dollop of sour cream. Yum!

How do you know if you over-cooked chicken?

The biggest sign that chicken is over-cooked is that it’s going to be really tough and dry. It’s still fine to eat, it just might be a tad bit chewier.

Ingredients

  • 4-6 Boneless, Skinless Chicken Tenderloins (pre-cook)
  • 1 pkg. frozen cut broccoli
  • 1 can cream of broccoli, or cream of chicken soup
  • 2 c. uncooked rice (pre-cook)
  • 1 Can Chicken Broth
  • 1 pkg Shredded Cheddar (also yummy with Mexican mix)

Instructions

  1. Combine chicken, cooked rice, cooked broccoli, soup, and 1/2 of the cheese. stir all together and top casserole with remaining cheese.
  2. Cook in oven at 350 degrees until cheese on top is melted.
