I’m so glad you liked the recipe! For the changes you are looking at doing, you should be able to swap out the vegetable oil for butter or coconut oil using a 1:1 ratio. (I’ve never made it this way, but that is what I would likely try) Instead of using the bananas, you could try with applesauce. I researched and found that some people use 1/2 cup applesauce per 1 banana in recipes, so that is a good starting point! 🙂 Be careful not too add more than 1 cup of applesauce total as that will likely make the mixture too wet and have issues baking. Let me know how it tastes if you make the swaps!

yep, of course. The bottom picture, right before the recipe card, is the very original picture from the kitchen in my old home. My boys love it and I still make it often.
