This delicious and easy Orange Coconut Salad is one of my favorite low calorie sweets with fruit. So versatile, it works as a side, as dessert–breakfast in a pinch. Seriously yummy.

Look, I get it. Sometimes, you don’t want just navel oranges and a little coconut to get you through (just kidding, I love it just the way it comes, but whatever). So, I’ve come up with some mix-ins that you can add to your fruit dessert to change it up:

Orange Coconut Salad Recipe

Yield: 10
Prep Time: 5 minutes
Total Time: 5 minutes

Oranges, Yogurt, and grated coconut make a YUMMY, healthy, side dish or dessert!

Ingredients

  • About 10 large navel oranges
  • 2 tablespoons grated coconut
  • ¼ teaspoon coconut extract
  • 2 tablespoons fat free plain yogurt or fat free sour cream
  • 2 packets non-sugar sweetener, optional

Instructions

  1. Peel oranges and cut into bite-sized pieces.
  2. Put into large mixing bowl and add other ingredients.
  3. Mix well and refrigerate until ready to serve.

Since I'm only one person, I am hoping I can use Halo's instead of Full Size Oranges. I have the coconut and Sour Cream, so I'm going to give it the old college try and use it as a side for my Kaula Pork and Sauteed Zucchini.
