Mexican Velveeta Cheese Dip

At our house, we have 2 teenagers (and one only about 8 months shy of 13).  That means we really have at least 4 teenagers!  The boys have friends and those friends drive.

Yes, our house can be a bit like Grand Central Station and I wouldn’t change it for anything!  I love hanging in the kitchen with all the boys, listening to them jank on each other, hearing their fears, their wins, getting hugs, all the things.

But, all those boys means that we always have to have food.  It also means that I have to have spicy, man-food, not just food. I keep a stack of easy RoTel recipes on hand and a few cans of RoTel.

This Mexican Velveeta Cheese Dip is one of my go-to’s and a favorite among all the guys that stop into Miller Manor.

As long as I keep a can of RoTel, some Velveeta Cheese, and a bag or two of Tortilla chips on hand, I can make this simple dip.

I also like to make this RoTel dip with ground beef as more of a meal. But, going meatless means that I can pull it together in 5-10 minutes!

Specialty Ingredients:

The following ingredients are affiliate links on Amazon because they may be a bit hard to find in your normal store.  I wanted you to be able to see exactly which things we are using.

RoTel – it is just canned, diced tomatoes with chopped green chili peppers.

Velveeta Cheese – we have used store brand and the white one. Both work (and taste) just as good.  Tip: if you have your velveeta cut into 1/2-inch cubes before placing it in the microwave, it will melt faster.

Tortilla Chips – I prefer white chips, but my guys like the yellow corn chips better.

That’s it!  Since they are all pretty heavily processed, you can keep them on hand.  LOL!

Mexican Velveeta Cheese Dip Recipe Notes:

Remember to microwave the cheese on high.

Cube Velveeta for faster melting.

As the cheese melted, stirring is necessary.  I usually do 2-3 minutes, then stir and continue stirring after every 45-60 seconds.

I add the RoTel after melting the cheese for the first 2 minutes.

Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 12 minutes

Tart tomatoes, spicy green chilis, and creamy velveeta combine to create a perfect dip recipe for snacking, game night, or just because.

Ingredients

  • 2 lbs of Velveeta
  • 1 can RoTel original

Instructions

    Cube Velveeta into large microwaveable bowl
    Put RoTel into food processor to liquefy.
    Add processed RoTel.
    Microwave on high, stirring frequently until all melted.
    Serve with tortilla chips.
