Menu Plan Monday: The Days are Getting Hotter!

My menu plan this week is going to focus on recipes that use the oven.  Our days are getting hotter and our power bill is getting higher down here in Southern Alabama.  The best way to combat the heat of Summer is to NOT use the oven!

In addition to making meals that don’t heat the house, I am including a few resources for delicious cold desserts to have this week.

Breakfast

Monday – Egg White Crustless Quiche from The Gardening Cook with buttered toast

Tuesday – Ham, Egg, & Cheese Avocado Toast from The Latina Homemaker

Wednesday –  Oatmeal with Fruit

Thursday –  Sausage & Egg Breakfast Taquitos from It is a Keeper with Cubed Cantaloupe* (Use leftover from previous week).

Friday – Muesli Blueberry Muffins from A Simple Pantry with White or Chocolate Milk

Saturday – Eggs, Bacon, and Toast

Sunday – Make Your own Granola at Frugal Family Home and serve in milk.

Lunch

Monday – Egg Salad Sandwiches, Pickle Spear, Grape Tomatoes

Tuesday – Turkey, Avocado, Feta & Tomato Grilled Sandwiches or Paninis

Wednesday – This  One Skillet Thai Peanut Chicken Zoodle Bowl from Almost Super Mom will make an amazingly tasty lunch.

Thursday – Sicilian Style Subs are simple but full of zesty flavor. Start by cooking some Italian Sausage links, let cook, and slice, then layer on a hoagie bun, salami, pepperoni, capicola (or ham slices) along with sausage slices, and provolone cheese, place in the oven to melt the cheese. Then, top with onion slices, green peppers, tomato, and lettuce, mayonnaise & Italian dressing  with Potato Chips and Pickle Slices.

Friday – Beef & Bean Burritoes with Frito Chips

Saturday – Chilled Avocado Soup from Weelicious with Toasted French Baguette

Sunday – Cold Pasta Salad with Corn on the cob

Dinner

Monday –Loaded Chicken Breasts Recipe served with Rice and Broccoli

Tuesday – Spaghetti Carbonara over at It is a Keeper

Wednesday – Grilled Chicken, Avocado, and Strawberry Salad with Feta by More than Pancakes is a perfectly light summer dinner that packs flavor and healthy goodness.

Thursday – Tacos in a Bag (also known as Walking Tacos) make it easy to feed the family dinner on the go. Start a slow cooker in the morning with 1 lb. ground beef, plus your favorite taco seasoning packet. Stock up on individual bags of Fritos or Doritos chips. Shred some lettuce, and chop some tomatoes. Before heading out the door for that baseball or soccer game, have each person throw their favorite taco ingredients into a chips bag, and grab a bottle of water. Then head out the door and have everyone eat in the car on the way. (Well except the driver, maybe they can eat before leaving, lol.)

Friday – Asian Chicken Thighs with Vegetables from My Life Cookbook

Saturday – Make your own Homemade Pizza with this recipe from Faith Filled Food for Moms
