Menu Plan Monday: Summer is Coming!

Quick casseroles, low carbs, cool salads… yep, my menu is reflecting the outside heat!  I hope you enjoy the tastes of summer as much as I do as this week’s menu plan really celebrates all of the sweet, tangy, and tart flavors that I associate with Summertime.

In additional to our regular printable menu plan and shopping list, I have also included several Fun Summer resources (including a yummy snack) for you and your children this week.

Breakfast

Monday – Eggs Benedict Breakfast Bake at Foodtastic Mom

Tuesday – Sausage links, with toast & jelly.

Wednesday – Egg White Breakfast Cups at Tasty

Thursday – Yogurt Cups or tubes, with fresh strawberries. Prep the berries by washing, removing stems and patting dry the night before.

Friday – Easy breakfast quesadillas with scrambled egg, cheese and ham or sausage.

Saturday – Low Carb Puff Pancakes at Baking Outside the Box

Sunday – Oven “Fried” bacon strips, with scrambled eggs, and toast.

Lunch

Monday – Meatballs with marinara dipping sauce, (buy meatballs from the frozen section), string cheese, cubed watermelon.

Tuesday – Paleo Beef Avocado Blueberry Salad with Maple Mustard Dressing at The Gardening Cook

Wednesday – BLT Chicken Salad from Lemon Tree Dwelling with Potato chips and sliced apples

Thursday – Watermelon, Blueberry & Feta Salad from The Suburban Soapbox

Friday – Pasta Salad, with cucumber, olives, feta, and tomatoes, mix in Greek vinaigrette.

Saturday – Chicken Club Quesadillas via Six Sisters’ Stuff with a simple garden salad.

Sunday – Spinach and quinoa salad from Kristin’s Kitchen

Monday – Chicken Teriyaki Lettuce Wraps at Midwest Modern Momma with a side of quinoa.

Tuesday – Pulled Pork BBQ Sliders at Family Fun Journal with Apple Baked Beans at Sassy Southern Yankee, and Copycat KFC Cole Slaw at 3 Boys and a Dog, (reserve leftover pulled pork for dinner Tuesday week 24).

Wednesday – Shrimp Scampi served over pasta with Cucumber & Sweet Onion Salad on the side by Comfy in the Kitchen.

Thursday – Crispy Baked Chicken Drumsticks at Fluster Buster with Easy Parmesan Orzo from It is a Keeper

Friday – Put your grill to work, with Grilled Pork Tenderloin from A Mom’s Take,  with Zucchini and Squash in foil packets. (While you have the grill heated up, be sure to grill 2 boneless, chicken breasts for an quick and easy dinner next week.)

Saturday – Slow Cooker Beef & Bean Enchiladas at Frugal Family Home served with a lettuce wedge and ranch dressing.

Sunday –  Spinach Stuffed Chicken Parmesan at Kleinworth & Co. served with buttered pasta and spinach salad.

My daughter just finished school this Friday we are officially on summer vacation. I am catching up on house work. I did the laundry hubby did the dishes and now it's on to cleaning out the fridge and menu planning and grocery shopping. I am glad I found your link new subscriber here. I am also a blogger but I enjoy reading other peoples blogs too
