As we near the end of the month, budgets start straining for many of us.  That means lots of starches and eating from our freezer and pantry.  This week’s End of the Month Meal Plan uses leftovers from the previous five weeks and low-cost ingredients to help you feed your family all the necessary meals while scraping the bottom of your bank barrel. 🙂

Breakfast Menu:

 Monday: Cheesy Hash Browns and Sausage Skillet via Mandy’s Recipe Box

Tuesday:  French Toast (make extras for a lunch surprise for the kids),  berries.

Wednesday: Use frozen, Easy Mini Sausage, Egg & Veggie Omelets from week 4,

Thursday: Oatmeal Raisin Muffins via 3 Boys and a Dog, with a fruit salad side.

Friday: Make Ahead Breakfast Casserole: Blueberry French Toast via Wondermom Wannabe

Saturday: Toast Toppers are easy to do, simply make toast, then use what you already have in the fridge or cabinets to top your toast. Get inspiration for 25 Toast Topper Ideas from Super Healthy Kids.

Sunday: Use leftover Bananas for Banana Bread, with a protein on the side, such as Ham slices, or sausage links, whatever you have available.

Low Cost End of the Month Meal Plan’s Lunch Menu:

Monday: Breakfast Leftovers Bento Lunch via 3 Boys and a Dog

Tuesday:  Yogurt Cups and  No Bake Energy Bites from Thrifty Frugal Mom

Wednesday:  Ants  on a Log,  (Celery, Peanut  Butter &  Raisins) Pretzel Sticks

Thursday: Apples, Peanut Butter Sandwich, Celery, Leftover Energy Bites

Friday: Make Your Own Taco Bento Box

Saturday: Meatball Subs, with marinara & mozzarella cheese.

Sunday: Leftover White Bean & Cabbage, Potato Soup will be an easy lunch while you prep for the Big Game.

Dinner Menu:

Monday: Busy Day BBQ (Barbeque) Meatballs Recipe  with Baked Zucchini Fries (leftovers from week 4). Mix up a few extra meatballs and cook without sauce, for Saturday’s lunch.

Tuesday: Crock-Pot Aloha Chicken via Crock Pot Ladies serve with white or brown rice.

Wednesday: Taco Bake Recipe from 3 Boys and a Dog, of course nachos and salsa are a great side addition to this taco bake. Brown & Season a little extra beef for Friday’s Lunch.

Thursday: Crock Pot Crack Chicken and Pasta via Mom’s Cravings

Friday: White Bean & Cabbage, Potato Soup via Vanilla and Bean

Saturday: Cheesy Hamburger Casserole via Flavorite, this is a great recipe for using up leftover cheese. Serve with roasted veggies using whatever veggies you have on-hand.

This all sounds very yummy! I find we eat a lot more soups and casseroles when I'm trying to stretch our budget.
