Week two of school and I already have one home sick. This was one thing I was worried about with sending my kids to school. Thomas is my “sickly” child. He has asthma and everything that he gets from a runny nose to a low-grade fever settles in his chest and has to be treated with around-the-clock breathing treatments.
Ok, on to my menu plan for this week:
Monday: Chicken and Broccoli Casserole
Tuesday: Cheesy Beef and Potatoes
Wednesday: Manwiches
Thursday: One-Pot Roasted Pork Supper
Friday: Leftovers

how do your make your cheese and beef dish

Angie, it is actually VERY easy... I probably should write the recipe up. But, in the meantime... I brown and drain hamburger meat and season it up with whatever.. salt, pepper, chopped onion, minced garlic, that type of stuff. I peel and slice potatoes and boil them. Then, in a casserole dish, I start layering the meat, potatoes, and grated mozzarella cheese. Once at the top, I pour (a mixture of 1 can cream of mushrrom and 1/2 can of water) all over the top and use a fork to make it sink in. Then, I bake at about 350 for a few minutes until the cheese melts. :-)
