Loaded Mashed Potatoes

We eat TONS of potatoes at our house.  They are cheap and can really fill a body up.  So, when trying to feed 3 growing boys and a husband, I have to use starches.  We get bored with the same Mashed Potatoes or Potato Salad all the time.  So, I have been trying to come up with a few variations of your typical potatoes!

Just making mashed potatoes a bit yummier!

Ingredients

  • 6 - 8 Potatoes - peeled diced, and boiled
  • 1 Packet Ranch Dressing Mix
  • 1 can of evaporated milk
  • 1 stick of butter I use Country Crock margarine
  • 1/3 cup of Bacon Bits
  • 1 cup of Shredded Cheddar or Mexi-Mix
  • Salt and Pepper to Taste
  • 1/4 cup sour cream

Instructions

    After draining your potatoes, combine ALL ingredients in a large bowl. (I use my mixer)


    Whip until smooth and fluffy!


    Serve - simple, huh?
