Are you using a boxed mix? You can pretty much ignore the back of what the box instructions tell you.

Always add one more egg than it calls for.

Replace the oil! Instead, use melted butter and double the amount that is asked for.

Now the water: subtract 2 ounces for that extra egg and the amount of that extra butter. (Example: it called for 1/2 cup of vegetable oil and 1 cup of water with 3 eggs. Use 1 cup of melted butter, ¼ cup of water and 4 eggs)

Bake LONGER but at a lower temperature. If the box says 25-30 minutes at 350, do 45 minutes at 300. This slowing down of the cooking makes moist cakes.

Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

If you prefer to avoid the box, you can make your very own Funfetti cake using this recipe.

Ingredients

  • 2 ½ cups all-purpose flour
  • 2 teaspoons of baking powder
  • ½ half teaspoon of salt
  • 1/2 cup butter at room temperature
  • 1 ½ cups of sugar
  • 1 cup of milk at room temperature
  • 3 large eggs at room temperature
  • ½ vanilla extract
  • 2 ½ teaspoons of rainbow sprinkles

Instructions

    Preheat your oven to 350F. Grease in your baking pan. In a big bowl, combine your baking powder together with your flour. Then add your salt.


    In larger bowl, cream together butter and sugar until it becomes fluffy. You can now add your flour mix.


    In a smaller bowl, stir the milk, eggs and vanilla extract together. Then add these wet ingredients to the butter/flour mixture. Beat on low speed until they are all well incoprporated.


    Here comes the Funfetti part: fold the rainbow sprinkles using a spatula and then pour the batter inside the prepared pan. Just add a few sprinkles at the top of the cake. And bake for about 45 minutes, until the toothpick inserted into the center of the cake comes out clean.


    You should then allow your already baked cake to cool down before removing it from your pan.

I make alot of special occasion cakes for other people. For any store bought cake mix I have often used the butter in place of oil and extra eggs. I also use milk instead of water. Seems to help the cake stay moister.
