Hi! Thanks for catching that detail. Yes, the remaining 1/4 cup of grated parmesan is intended as a garnish. The ingredients calls for 1/2 cup of grated parmesan but the instructions has you only adding 1/4 cup grated parmesan to the crock pot. Is the remaining 1/4 cup for garnish?

This soup really hits the spot on them cool, winter days and even good during the Summer / Fall months. It’s just hubby and myself and sometimes I will make extra, put in freezer containers and have for another day.

I do use ground beef and mild Italian Sausage along with a bag of frozen mixed veggies, veggie broth and if I don’t have any broth on hand then will use original V-8 juice. Maybe at times a can of mild Ro-Tel.
Mostly I add in what I have on hand. Quick, easy, and OH, So Delicious!
