How to Make Hamburger Meat and Wild Rice Soup

In a skillet over medium high heat, brown your ground beef with onion (celery if desired) and garlic. Place the browned beef into your slow cooker.

Add the carrots and wild rice blend, along with parsley, thyme, rosemary, salt and black pepper. Sometimes I also toss off a bay leaf, too, but that’s for fancy meals. LOL!

Pour your beef broth over the top and stir well. You can use chicken broth or vegetable broth for a little more complex flavor, but whatever you have is fine.

Cook covered on low for 6 to 8 hours or high for 3 to 4 hours. Alternatively, you can cook this on the stove in a dutch oven or soup pot for 30-45 minutes, just bring to a boil and keep it going, stirring occasionally.

When you’re ready to serve, stir in the heavy cream and set your slow cooker to high.

Cook for an additional 30 minutes, until the cream is warm. If you’re making this on the stovetop, reduce heat at this point and then simmer for an additional 10 minutes.
