My family loves tortillas! More recently we’ve been enjoying them more and more as we’ve been on a burrito kick since we got this new burrito place in our city. After we tried their burritos we just had to try and duplicate them at home so we could have them more often haha! We love to make fajitas, soft tacos, enchilada casseroles, homemade cinnamon tortilla chips with fruit dip. The tortilla is very versatile! There is a new cookbook in town (to coin a phrase) called Tortillas to the Rescue: Scrumptious Snacks, Mouth-Watering Meals & Delicious Desserts – Made with the Amazing Tortilla by Jessica Harlan. My mouth was watering just reading all the tortilla recipes, I already have a list of recipes I want to try.
Since my kids requested fajitas as their back to school meal, it was a no brainer to try out the Chicken and Bell Peppers Fajitas (page 91-92). You can make this dish on the grill, stove or countertop grill, I used my stove since it was a rainy day on our first day back to school here :(. I made a few substitutions/omissions due to personal taste and ingredients on hand, but the meal turned out perfectly! The spices for the chicken made for a really unique flavor that we don’t usually go for and the sauce, OH WOW, was it ever spicy but oh so tasty! I would say it was a definite hit, I’d like to try it with steak next time as well, I think the sauce would pair perfectly with steak as well. (I managed to take a “cast of characters” picture but forgot to take a picture of everything assembled. I guess I was just too excited to try the meal I forgot to take more pictures lol)
Next up will be the Apple-Cinnamon Tortilla Pockets, basically it’s like apple pie filling inside a tortilla and baked in the oven. The perfect fall type dessert if you ask me!
Not only does the book include recipes but it starts out with tips for buying, storing and warming tortillas as well as a brief history of how we got the tortillas of today. I found it a very interesting read. I think this will be one well used cookbook in our house. We love mexican food so it’s the perfect fit.
