One possible culprit could be elevation. Different elevation levels can impact baking because air pressure, humidity, and boiling points all vary. At higher elevations, bread may rise faster but struggle to fully set before the machine's cycle ends, leading to an undercooked center.

Came out of bread machine not fully cooked. The middle was gooey so I’m throwing it in the oven for a few. I think this would be good in a pan and cooked in oven instead of the bread machine maybe?

It's a good idea to grease the loaf pan to prevent sticking, especially with pumpkin bread. Happy baking, and enjoy your pumpkin bread!

I've never heard of greasing the loaf pan in a bread machine. Is this absolutely necessary? Is it because of the type of bread that it is?
Thanks so much! I can't wait to make it.

Thank you for your comment! Almond flour can be a great alternative to regular flour in bread machine recipes. Just keep in mind that almond flour tends to be denser and can result in a heavier texture. You might want to try using a blend of almond flour and another gluten-free flour for better results.

As for coconut oil, it can definitely be substituted for vegetable oil in most bread machine recipes. Coconut oil adds a subtle tropical flavor and can enhance the overall taste of the bread. However, be aware that coconut oil solidifies at cooler temperatures, so make sure to warm it up slightly before using it in your bread machine.

Experimenting with different ingredients is always fun, so go ahead and give it a try! Let me know how it turns out. Happy baking!

Oh no! Did you allow it to cool in the pan?

I just made this and followed the recipe to the tee. When the bread machine was done I removed the bread and let it cool for at least an hour. I was so disappointed to see that the loaf was not cooked all the way through. The insides were like raw batter. We were able to salvage 2 slices out of the whole loaf.
I set the machine to quick bread and 1.5 size loaf. Have no idea what went wrong. ?

I feel certain you could - you are doing an even swap so it should be fine. If you try it, please come back and let us know how it goes. :-)
