You’ll notice from the directions and ingredients listed below on the recipe card that using a cake mix makes every step easier.

It’s one of my favorite baking “secrets” that isn’t a secret at all. Using cake mix in the cupcake batter cuts down on many other steps.

Cupcakes are a popular and straightforward dessert because you can make one (or two) for each person and know precisely how much you have to bake. This is perfect for meal planning and for prepping for parties, too!

How do I know when the cupcakes are done baking?

Baking cupcakes can be a wonderfully rewarding experience, as the delicious, fluffy treats make for an excellent snack or dessert.

However, it is essential to know when cupcakes are done baking so that your treats don’t come out dry and tough.

A great way to tell if a cupcake is cooked through properly is to press your finger on its top lightly. If the center feels firm and springs back, your cupcakes are ready!

Another method of testing is poking a toothpick in the middle of the cupcake–if it comes out clean, then it’s time to take them out of the oven!

Easter Basket Cupcakes Recipe

Yield: 24 cupcakes
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1 box of white cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 can of vanilla frosting
  • 1 package sweetened coconut
  • 1 package jelly beans
  • Sour Punch Straws

Instructions

  1. Preheat the oven to 350 degrees and line the cupcake pan with liners.
  2. Add the cake mix to a bowl, and mix in the water, oil, and eggs. Use a mixer at medium speed.
  3. Pour the cupcake batter into the liners at 2/3 full.
  4. Put the pan in the oven and bake for 18-20 minutes. Let the cupcakes cool.
  5. Add 1 tsp water and the food coloring to the coconut. Mix. Spread it on a parchment-lined baking sheet. Let it dry.
  6. Add frosting to a piping bag and frost the cooled cupcakes.
  7. If you want to add a basket wrapper to the cupcakes, you can do that now over the other liner.
  8. Frost the cupcakes and then roll the cupcake top in the coconut.
  9. Add 3-4 jelly beans and a sour straw as a handle.
