The maraschino cherries add a touch of elegance to these chocolate and cherry easy cake mix cupcakes.

Growing up, my Daddy always had Chocolate Covered Cherries.  I loved sneaking in and eating the chocolate and gooey center, but I couldn’t stand the cherries. So, I left them in the container.  LOL!

I was a weird kid who had issues with textures. Oh, who am I kidding? I still don’t like whole cherries or water chestnuts. Ick. LOL!

Specialty Ingredients:

The following ingredients are affiliate links on Amazon because they may be a bit hard to find in your normal store.  I wanted you to be able to see exactly which things we are using.

Chocolate Chips – I am a milk chocolate person, but most people prefer semi-sweet.  The choice is totally up to you.

Cherry Pie Filling – The cherry pie filling is an absolute must! It is what makes this recipe THIS RECIPE. LOL!

Boxed Chocolate Cake Mix – I have said it before, but I am not really particular about what brand chocolate cake mix I choose. I like Pillsbury, Duncan Hines, Store Brand – it doesn’t matter. To me, they are all basically the same.

Powdered Sugar – We keep confectioner’s sugar at our house.  Like above, we aren’t super particular!

Must Have Resources:

When making these chocolate cherry cupcakes at home, you really need to have the following Amazon affiliate tools on hand.

Cake Tester – I love my cake tester.  Instead of throw away toothpicks, just use this inserted in the center of your cupcake to see if it is done.

Cupcake Liners –  These are all about taste.  Choose liners that make you happy.

Sugar Sifter –  This sifter can help you to decorate with cocoa powder or powdered sugar.

Muffin Pan –  This is a necessity if you are cooking cupcakes.

Cooling Rack –  You need a wire rack for cooling the cupcakes.  The raised gaps allow air to get to all sides.  This allows the cupcakes to cool completely much faster.

How do I test if the cupcakes are done baking?

Testing whether or not cupcakes are done baking can be done by inspecting the look and feel of the cake. The cupcakes are usually ready if it has a golden-brown layer on top and feels firm to the touch.

A further indication of doneness is if a toothpick inserted into the center of a cupcake comes out without wet batter attached.

If the cupcake does not seem done after this test, put it back in for another few minutes and test again.

Chocolate Covered Cherry Cupcakes

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients

  • 1 box Chocolate Cake Mix
  • 3 Eggs
  • 1/3 cup Oil
  • 1 can Cherry Pie Filling
  • Cherries with or without stems
  • 1 cup Chocolate Chips
  • Powdered Sugar for topping

Instructions

    Preheat oven to 400 degrees and line a cupcake pan with liners.


    In a large mixing bowl mix by hand your cake mix, eggs, oil, and cherry filling.


    Pour batter into cupcake liners, filling them 3/4 of the way full.


    Bake for about 15 minutes or until a toothpick comes out clean.


    Place cherries on baking sheet lined with wax paper and place in freezer.

    Let cupcakes cool completely.


    Take your chocolate chips and melt them down in the microwave, using 30 second intervals until completely melted.


    Place frozen cherries in chocolate, coating each one completely. Use a fork to shake off excess chocolate and place back on wax paper.

    Freeze chocolate covered cherries until hardened.


    Sprinkle each cupcake with powdered sugar and place frozen chocolate covered cherries on top.

    Serve and enjoy!
