New Year’s Eve, Weddings, new homes all call for Champagne. But, they also call for sweets.  By now, you know I am about easy!  I love that these New Year’s Eve cupcakes start with a boxed cake mix!

These Champagne Cupcakes are the perfect combination of celebratory Pink Champagne and party-time cupcake!

Take note that this post includes two different recipes.  We have the one for the Champagne Cupcakes using a canned white icing.  But, we also have a recipe for Champagne Buttercream Frosting if you prefer to use that.

Specialty Ingredients:

White Cake Mix – I like Betty Crocker, but I am honestly not loyal. I have also used store brand and been happy.

White Icing – See above 🙂

Gold Sprinkles – You know I like Wilton. But, you can get a set with gold and silver from Walmart.

Silver Sprinkles – This set includes gold, silver, and clear.

When making anything that starts with a boxed cake mix, you don’t have to worry about so many measurements.  The measurements of dry ingredients like flour, baking powder, and salt are all done for you.  This will help you to produce a light and fluffy dessert!

Champagne Cupcakes Recipe Notes:

Preheat oven to 350 degrees and allow it to actually reach that before placing the cupcakes into it.

A toothpick inserted in the center comes out clean when the cupcake is done.  I would choose a cupcake in the center of the muffins cups to test, not one on the outside.

Allow the butter to reach room temperature before using it.

Add the powdered sugar a cup at a time to keep from having a nice coating of white powder everywhere.

I like to add about a 1/4 teaspoon of vanilla extract right before putting the mixer on high speed.

For a whiter cupcake, use 4 egg whites instead of 3 eggs.  It still won’t be totally white, due to the butter, but it will be whiter.  You could avoid the yellow but using a 1/4 cup of coconut oil instead of butter.

If you prefer to make your own icing, try this delicious champagne frosting.  Really pay attention to the recipe below for your champagne frosting.

If you don’t hit the right buttercream frosting consistency, you won’t be able to pipe it onto the cupcakes.

The below recipe will give you a perfect buttercream icing with a slight champagne flavor. It is the best addition to the above Champagne Cupcakes!

Champagne Cupcakes Cake Mix Recipe

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

These Champagne Cupcakes are the perfect combination of celebratory Pink Champagne and party-time cupcake! The glitz and glam of the gold & silver adds a festive touch that makes them perfect for New Year's!

Ingredients

  • 1 box White Cake Mix
  • 1 cup of Pink Champagne
  • 1/3 cup Butter Softened
  • 3 Eggs
  • White Icing
  • Gold and Silver Sprinkles
  • Frosting INGREDIENTS:
  • 4 cups Confectioner's sugar
  • 1 cup Butter
  • 1/4 cup Champagne

Instructions

    Start by mixing your cake mix, butter, eggs, and champagne.


    Mix with a mixer on high until well blended.


    Pour mixture into cupcake tins, and bake according to box instructions.


    Let cool completely.


    Fill piping bag with white icing and place 1M tip on the end.


    Start in the middle and work your way out and up with icing.


    Apply sprinkles.


    Serve and enjoy!

    How to make frosting:

    Add powdered sugar to mixing bowl.


    Add softened sticks of butter.


    Beat on low until powdered sugar is mixed in. Then, move mixer up to medium-high speed. Scrape sides and bottom of bowl often. When completely mixed, the frosting may appear dry.


    Add Champagne, a little bit at a time, until frosting is the proper consistency.
