Since this recipe only needs about five hours in the slow cooker, you don’t have to get up early to start cooking it.

You can put it on around lunchtime, and it’ll be ready just in time to hit the dinner table! Leave the lid on your crockpot as the food cooks to avoid losing heat.

While some people may not think pork and apples go together, they’ll change their minds with this dish! It’s one of the best recipes for a delicious dinner. Hands down!

My boys LOVE this dish and always ask for it. Since it’s simple to prep and cook, I’m happy to add the ingredients and let the cooking process take over. And I love the way the house smells!

Why are my pork chops tough in the slow cooker?

There’s a reason why this happens. Pork chops are lean meat that does not have the same marbling as beef or other cuts of pork, which means they are more prone to drying out and becoming tough when cooked at high temperatures for a long time.

To avoid this, try using fattier cuts of pork or adding some liquid, like chicken broth or apple cider, to help keep the meat moist.

It may also be helpful to layer the pork chops on top of other ingredients, like onions or potatoes, to prevent them from directly touching the bottom of the slow cooker.

You can still achieve tender and flavorful pork chops with some adjustments in the slow cooker.

How do I make sure the pork is fully cooked?

Pork is one of the most popular meats worldwide, but it is important to ensure it is cooked properly to avoid foodborne illnesses.

You should use a meat thermometer to ensure the pork is fully cooked. Insert the thermometer into the thickest part of the pork, ensuring it does not touch the bone.

The internal temperature should reach 145°F (63°C) for pork cuts like chops, roast, or loin. Ground pork should be cooked to 160°F (71°C).

Once the pork reaches the desired temperature, rest for a few minutes before cutting and serving. This will allow the juices to distribute throughout the meat, keeping it juicy and tender.

Ingredients

  • 6 or 7 pork chops bone in or out
  • 3 red delicious apples cored and sliced
  • 1 tablespoon of balsamic vinegar
  • 1 onion julienned
  • 1 teaspoon of thyme
  • 2 teaspoons of salt divided (or as desired)
  • 1 teaspoon of ground black pepper divided (or as desired)
  • 2 teaspoons of ground sage divided
  • 1 tablespoon of brown sugar
  • 32 oz of unsalted chicken stock
  • 1 bay leaf
  • 3 tablespoons oil

Instructions

  1. In a large bowl season pork chops with 1 teaspoon of salt, 1 teaspoon of sage and ½ teaspoon of black pepper.
  2. Add two tablespoons of oil to a pan over medium high heat.
  3. Once the oil is hot, add pork chops (3-4 at a time) to pan.
  4. Brown pork chops, 3-4 minutes per side, flipping only once.
  5. Meanwhile, layer the slices of two apples to the bottom of the crock pot. Once pork chops are browned, layer pork chops over apple slices.
  6. Once pork chops are removed, lower heat to low/medium. With the reserved juice of the pork chops and one tablespoon of additional oil, add in the onions and cook until softened, about 4-5 minutes, stirring occasionally. Layer cooked onions over the pork chops in crock pot.
  7. Add remaining ingredients to crockpot, cover and cook on low 4-5 hours or high for 2-3 hours.

I love Apples and Pork Chops, but usually I bake them in the oven instead of making them in the crockpot. That's a great idea, I will have to try this!
