Pineapple Casserole Recipe (with Ritz Crackers)

This Pineapple Casserole recipe is crazy good and addictive! Many people refer to it as a southern pineapple casserole because it’s such a common southern side dish. This could be a side dish or saved for the end as a sweet dessert, in my opinion!

The pineapple chunks add a great sweetness to this recipe and I really like the texture that they add as well. It’s a great palate refresher to have on the table during the holiday season.

Pineapple Casserole

Once you combine the ingredients and add the mixture into the prepared casserole dish, you’re well on your way to being super close to enjoying it. The buttery goodness of the Ritz crackers on top adds the perfect sweet flavor!

We’re huge fans of this because we’re from the South! This is pretty common in our neck of the woods and it’s a fun dish to make. My boys really like this dish because it’s sweet and they feel like they’re eating dessert in the middle of the meal!

Can you use crushed pineapple for this recipe?

Sure, if you want! I really like the texture of the chunked because it’s big bursts of sweetness but crushed pineapple can work just fine, too.

Once you notice the top starting to turn golden-brown, it’s time to start paying attention to what’s happening inside the oven.

Pineapple Casserole

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

This casserole recipe is simple and easy to make!

Ingredients

  • 2 lg. cans chunky pineapple (drained)
  • 1 1/2 c. sugar\
  • 6 tbsp. self-rising flour
  • 2 c. grated sharp cheddar cheese

Topping ingredients:

  • 2 c. Ritz cracker crumbs
  • 1 stick melted butter

Instructions

  1. Drain pineapple, reserving 3 tbsp. juice. Combine flour, sugar and stir in reserved pineapple juice. Add cheese and pineapple chunks. Mix well.
  2. Spoon mixture into greased 9 X13” casserole dish.
  3. Crush sleeve of Ritz crackers on top. Pour 1 stick of melted butter or margarine over top.
  4. Bake at 350 degrees for 30 minutes.

It is not a silly question at all - I can totally see why you would be unsure. Heck, I was unsure the first time I ever heard of it. LOL! In our family, it is definitely a side-dish. :-) It is good, your office colleagues will be impressed!
