Last week, we talked about trying to get our routines and schedules back to normal after the hectic Holiday Season. Now that we are in the first full week of the year, life is back to normal and it is time to tackle those to do list items that have gotten a bit backlogged – aka frogs!
One of the frogs I have is to get back to menu planning so that I can save money AND calories! I have set myself a goal to post a new printable menu plan and shopping list every single week for this entire year. Don’t want to wait? You can get all of January’s (or weeks 1-5) in my shop right now!
I know you are wondering what I am talking about… no, we are not having frogs for dinner. 🙂 Have you ever heard the saying “what’s the best way to eat an elephant? One bite at a time!”
Well, “eating frogs” is the same concept. I love the book Eat That Frog by Brian Tracy – read through it, I imagine it will reinvigorate you to tackle your tasks, too!

Week 2 Breakfast:
Monday – French Toast Sticks (using frozen sticks from week 1), Sausage Links, Blueberries
Tuesday – Easy Strawberry Smoothie via 3 Boys and a Dog, and Brown Sugar Maple Muffins via Money Wise Moms
Wednesday – Sausage & Gravy Casserole via Written Reality
Thursday – Boiled Eggs with Toast (Make Extras for egg salad lunch)
Friday – Berry Banana Breakfast Oat Bars via Natalie’s Food and Health
Saturday – Greek Yogurt with Strawberries and honey
Sunday – Ricotta Pancakes via Let the Baking Begin, Bacon, Berries
Week 2 Lunch
Monday – Waffle Sandwich Bento Lunch (using frozen waffles from week 1) via 3 Boys and a Dog
Tuesday – BBQ Pulled Pork sliders (use leftover pork from week 1) with, pineapple chunks and celery sticks
Wednesday – Lunch Box Kabobs via It is a Keeper.com with berries
Thursday – Greek Chicken Bowls via Eazy Peazy Meals
Friday – Curried Egg Salad Sandwiches (use extra eggs from Thursday’s breakfast), Grapes, Walnuts (or favorite nut)
Saturday – Leftover Potato Soup, Fruit Salad, Crackers
Sunday – Leftover Potato Soup, Crackers
Week 2 Dinner
Monday – Slow Cooker Alfredo Chicken with Bacon! via The Frugal Girls .com serve with a side of your favorite pasta, buttered.
Tuesday – Ultimate Creamy Beef Stroganoff via 3 Boys and a Dog, Dinner Rolls, Romaine Salad
Wednesday – Crunchy Honey Garlic Pork Chops Just a Pinch served with Roasted Broccoli And Cauliflower via It is A Keeper
Thursday – Oh So Southern Potato Soup via 3 Boys and a Dog with Homemade Hawaiian Bread via Butter with a Side of Bread
Friday – Teriyaki Chicken Casserole via Life in the Lofthouse with Asian Cucumber Salad via Joyful Healthy Eats
Saturday – Chicken Ranch Pizza Recipe via 3 Boys and a Dog with Balsamic Glazed Mushrooms via Paleo Cupboard on the side
Sunday – Balsalmic Roast Beef via Just a Pinch with Garlic & Parmesan Steak Fries via 3 Boys and a Dog
