This End of the Month Casserole is a delicious comfort food. This is the type of meal that comes together when I’m making my shopping list but haven’t actually went to the store to buy anything quite yet.

And no matter what, this easy recipe is always a hit. The kids love the taste of these ground beef and potatoes and I’m just happy that I always seem to have all these ingredients one hand. Because when you’re at the “end of the month”, you never know what food you’re going to have to make dinner.

Even though this is a great dinner recipe, you can easily save the leftovers and reheat for a breakfast casserole, too.

End of the Month Casserole

I’m pretty obsessed with the name of this simple dinner recipe. It’s one of those recipes that is relatable to all. If you’re like me, you probably have a food budget that you have to stretch out to make last for the month…and once you’re getting near the end, this is where dishes like this come from!

I’m all about feeding my boy’s hearty meals and this is why this one is a hit. There’s no denying that planning out your month’s meals and having this on the list is always a welcomed treat.

What are some varieties of this dish?

You can try all sorts of different things with this dish. Sweet potatoes could add a hint of sweetness as could adding in some other veggies like green beans as well.

Don’t forget to put on a scoop of sour cream to the top once you get done making it. (and a little dash of salt and pepper, too!)

Some people add in rice into this skillet casserole as well, but I tend to think that this makes it more of a rice casserole recipe.

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients

  • 1 pound make ahead hamburger meat or 1 pound of hamburger and 1 muffin of seasoning blend
  • 1 can 10.5 ounces Cream of Mushroom
  • 1 can 14.5 ounces Beef Broth
  • 1 Tablespoon of Minced Garlic
  • Dash of Kitchen Bouquet
  • Approx. 3 Slices of Bacon - cooked and crumbled
  • Approx 6 large potatoes.
  • 3 Cups of Shredded Mozzarella divided
  • Dash or Two of Worchestershire Sauce
  • Salt and Pepper to taste

Instructions

Preheat oven to 400°F.


To prepared hamburger meat, add: cream of mushroom, beef broth, kitchen bouquet, salt & pepper, garlic, and bacon. Bring to a boil and allow it to simmer while doing step #3.


Peel and slice potatoes. Cover with water in large pot. Bring to boil and continue at good rolling boil for about 7 minutes.


Layer 1/2 the potatoes, 1/2 the meat mixture, and 1/2 of the cheese (in that order) in a small dutch oven. I like to spray it with Pam first.


Repeat layers!


Cover with lid and bake for about 15 minutes or until cheese melts.


Remove from the oven, remove the lid, and allow it to sit (to thicken some of the juices) about 10 minutes.

Hi Kelly This looks yummy and it is good to "see" you again. So sorry to hear that you were having a hard time with and after surgery. That may explain part of my question. Are you aware that some of us (myself and one other girl for sure) did not receive the books you offered through Paperback Swap? PB has marked them lost in the mail and put a hold on your account. Any idea what happened?

Donna, thank so much and I have not been "missing". There is a contact button on PBS, you could have used it as some of the others have. :-) I put my account on vacation, because I had surgery. The books didn't arrive because I entrusted my husband with them. LMBO! He didn't make it to the post office until the first person didn't get their items. I asked and he confessed. Then, they went. However, they are shipping media mail and that can take several weeks. I keep hoping they show pretty soon. :-(

I love it, Kelli. We have a "clean out the freezer" supper every once in awhile at our house. And it usually ends up being "my best work", LOL!
