The smokey taste of the Colby cheese combined with the sugar-free barbecue sauce is not only delicious and provides a blast of flavor with every mouthful.

This meatballs recipe is super easy to make and is something you could prepare in advance before serving later in the day.

You can’t not love a meatball, can you? Perfect as an appetizer or part of the main dish they look incredible and taste even better.

Cheese and BBQ sauce will always be a winning combination in my book, and when you bite into the meaty goodness you get melted Colby cheese oozing out. Heaven on a plate!

Cheese Stuffed BBQ Meatballs

This is a recipe that is a little more hands-on. You will be combining all of the ingredients by hand and making sure everything is combined. The main event is not just the sugar-free BBQ sauce but the hidden piece of Colby cheese that when cooked is going to melt in the mouth, literally!

These Cheese Stuffed BBQ meatballs are something the whole family will love. All the boys in my house love them!

They are ideal to have as an appetizer when you are entertaining guests but they can easily be added to a tonne of other dishes or sides. The cheese and BBQ combination is a winning one that is for sure.

Can you fry the Cheese Stuffed BBQ Meatballs?

Yes, you can! Frying the meatballs can cook them faster, but unlike leaving them in the oven, you will need to keep an eye on them so they don’t burn. The oven is the easiest method, but if you want to fry them on the stove or even use other methods like a slow cooker or air fryer it will work just as well.

Why do my meatballs fall apart?

Sometimes meatballs can fall apart in the cooking process, and this is often because there isn’t enough of the binder ingredient. In this case, this is Almond flour.

Using the ice cream or cookie scoop to make a solid meatball will also help to prevent your meatballs from falling apart when cooking.

Cheese Stuffed Barbecue Meatballs

Cheese Stuffed Barbecue Meatballs

Prep Time: 1 hour 10 minutes
Cook Time: 25 minutes
Total Time: 1 hour 35 minutes

Delicious cheese stuff BBQ meatballs that are perfect as an appetizer or as part of the main meal.

Ingredients

  • 2 ½ pounds ground beef
  • 2 eggs
  • ½ cup almond flour
  • 1 cup barbecue sauce (I used sugar free.)
  • 1 (8 ounce) block colby jack cheese, cut into cubes
  • Salt and pepper to taste

Instructions

    1. Using your hands, mix together beef, eggs, almond flour, barbecue, salt and pepper.

    2. Using a large cookie or ice cream scoop, divide meat mixture into balls. Press a cheese
    cube into the middle of each ball and close the meat around the cheese.

    3. Repeat the process until all meatballs are prepared. Refrigerate 1 hour or overnight. May be frozen
    in an airtight container up to one month.

    4. When ready to cook, preheat oven to 400 degrees.

    5. Line a large rimmed baking sheet with aluminum foil. Cover with a wire rack. Spray with
    nonstick cooking spray. Evenly place meatballs on wire rack.

    6. Cook for 20 to 25 minutes or until meatballs are completely cooked through.

    7. If desired, baste meatballs with additional barbecue sauce and cook for an additional 5
    minutes.

    8. Serve and enjoy!

Notes

Using an ice cream or cookie scopp will help to ensure that you get solid round balls that won't fall apart during cooking.
