Ok, so here you go!  If you read my newsletter then you already know that I have started a new site.  I have had several of my new readers that are here for the few recipes I have ask how to keep from getting all the giveaway that they are not interested in.  Others have asked for more recipes.  I listed!  Just like I listen with the deal site, I have now listened with the recipes!

NEW Kraft Product: FreshTake #deliciousbyte

Ok, this stuff was amazing!  There is no other way to say it, it was amazing!  LOL!  Ricky said, “Oh man! I wish there was a restaurant around here that made stuff like this!”  I was like, “Why a restaurant?  It is much cheaper if I just make it and it was super easy… seriously, I video taped and the thing was about 9 minutes!”

Menu Planning Monday: Bacon Cheddar Meatballs Recipe

This week, over at the deal site, I am telling you about this really neat menu planning service! This week, as part of my menu plan, I am sharing one of the recipes from my menu planning session at Relish! this week.  I think my favorite part is that you can change the servings needed to fit your family size!meatballs

Bacon Cheddar Meatballs Recipe

Ingredients

  • Cooking Spray
  • 1 1/2 teaspoons olive oil
  • 6 bacon slices, diced
  • 1 1/2 white onions, finely chopped
  • 3 pounds ground beef
  • 1 1/2 cups shredded cheddar
  • 1 cup breadcrumbs (we like Italian seasoned crumbs)
  • 3 large eggs, lightly beaten
  • Salt and pepper to taste

Directions

1.  Coat a baking dish with cooking spray.  Heat olive oil in a large skillet over medium-high heat, then add bacon and cook for 5 minutes.  Add onion and cook for 3-5 minutes more until bacon is cooked and onion is golden brown.

2.  Remove mixture with a slotted spoon and set aside on a paper towel to drain and cool.  Place ground beef, cheese, breadcrumbs, eggs, salt, and pepper into a large bowl.  Add bacon and onion and mix by hand to combine thoroughly.

3.  Roll mixture into 1 1/2 inch balls and place in a single layer in the baking dish.  Bake at 450 degrees until cooked through and no longer pink in the middle… typically about 20 minutes.  Allow to cool before serving.

Makes approximately 24 meatballs.

RECIPE: Cookie Kisses and Cookie Cups!

This is one of those recipes that we love.  I think I make cookie kisses at least once a month at our house.  They are easy, yummy, and make great grab and go goodies!

Cookie Kisses Recipe

Ingredients

  • 1 package (20 ounces) refrigerated peanut butter cookie dough
  • 1 package of chocolate kisses, unwrapped

Directions

  • Preheat oven to 350°F. Cut dough into 9 slices. Cut each circle into 4 pieces.
  • Lightly spray mini muffin pan with non-stick cooking spray. Place one piece of dough into each cup.
  • Lightly press a chocolate kiss into each cup.
  • Bake 10-12 minutes. Let cookies cool in pan 15 minutes; remove to Stackable Cooling Rack.
    The variations are limitless!  We like to also use mini Reese Cups and sometimes use Sugar Cookie Dough.  I have also used my own easy peanut butter cookie recipe and just used small balls of dough.

RECIPE: Peanut Butter Candy Bar Bites

Peanut Butter Candy Bar Bites

 

Prep Time: 15 min. plus refrigerating | Makes: 32 servings.

Ingredients:

  • 1 pkg. (16 oz.) candy corn (2-1/3 cups)
  • 1 jar (16.3 oz.) PLANTERS Creamy Peanut Butter
  • 1/2 cup crushed Corn Flakes
  • 2 pkg. (8 squares each) BAKER’S Semi-Sweet Chocolate

Directions:

LINE 8-inch square pan with foil, with ends of foil extending over sides. Microwave candy corn in large microwavable bowl sprayed with cooking spray on HIGH 1 min.; stir. Continue microwaving until candy is completely melted, stirring every 15 sec. Immediately stir in peanut butter and crushed cereal until mixture resembles coarse crumbs.

PRESS firmly onto bottom of foil-lined 8-inch square pan; cool completely.

USE foil handles to remove cereal mixture from pan; cut into 32 bars. Melt chocolate as directed on package. Dip bars in chocolate; place in single layer in shallow waxed paper-lined pan. Refrigerate 1 hour or until chocolate coating is firm.

Peanut Butter Candy Bar Minis:

Cut into 48 bars instead of the 32 bars.

Kraft Kitchens’ Insider Tip:

To lessen the chance of crumbling, the cereal mixture is cut into bars while still at room temperature prior to dipping them in the melted chocolate.

Note:

If any melted chocolate remains after all the bars are coated, store it in a tightly covered container at room temperature until ready to use for another use.

Nutrition Information Per Serving: 200 calories, 11g total fat, 4g saturated fat, 2g polyunsaturated fat, 3.5g monounsaturated fat, 0g trans fat, 0mg cholesterol, 115mg sodium, 26g carbohydrate, 2g dietary fiber, 18g sugars, 4g protein, 0%DV vitamin A, 0%DV vitamin C, 0%DV calcium, 6%DV iron.
