GIVEAWAY: Cinnamon Chips from Prepared Pantry

CinnamonChips 300x200 GIVEAWAY: Cinnamon Chips from Prepared PantryA little while ago I was wasting spending some time pinning recipes that I’d like to try to make, and I came across a few that required cinnamon chips. Before that time I had never heard of them and I had no idea if I would ever be able to get my hands some, but I pinned the recipes just in case so that when/if I ever did find them, I would have some recipes all lined up to try.

Then the opportunity came to do a review of the cinnamon chips from The Prepared Pantry and well I just had to do it. I hadn’t been able to find them in the stores I usually go to, so this was the perfect opportunity for me to give them a try. Along with the chips they sent me some recipes and since I am usually in such a time crunch I decided I would make the Raggedy Ann Cinnamon Chip Muffins. Here’s the recipe:

Raggedy Ann Cinnamon Chip Muffins

This recipe makes ten large, well-domed muffins or 12 smaller ones.

Ingredients

2 large eggs
1 cup buttermilk
one teaspoon vanilla

2 cups all-purpose flour
1/3 cup whole rolled oats
1 cup granulated sugar
1/2 teaspoon baking soda
1/2 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon

1 cup Prepared Pantry or equal cinnamon chips

For the topping:

2 tablespoons granulated sugar
1/2 teaspoon cinnamon

Directions

Preheat oven to 425 degrees. Grease a muffin pan.

1. Whisk the eggs together in a small bowl. Add the buttermilk and vanilla. Set aside.
2. In a medium bowl, mix the flour, oats, sugar, baking soda, baking powder, salt, and cinnamon together.
3. Make a well in the dry ingredients and add the liquid ingredients. Stir only until combined. Add the cinnamon chips.
4. Drop the batter into the greased muffin cups. Mix the two tablespoons sugar and 1/2 teaspoon cinnamon together. Spoon the cinnamon sugar over the muffins.
5. Place the muffin pan in the oven. Immediately turn the temperature down to 375 degrees. Bake for 15 minutes or until done. Baking times will vary depending on how well your oven holds heat. Cool the muffins on a wire rack.

WOW! These are some mighty tasty muffins! The cinnamon chips end up melting so much that they are no longer chips but more like little pockets of melted cinnamon goodness! Even my husband (who is a very hard man to please when it comes to muffins) has repeatedly sad he likes them…..a lot! Very high praise indeed. I cannot wait to add these to my banana muffin recipe or hopefully find that long ago pinned recipe I wanted to try. I do believe that these chips will need to become a regular staple in my pantry.

I love to spend time with my Mother and seeing my friends and relatives lose theirs just makes me appreciate mine all that much more!  On this shopping trip, my Mom was trying on clothes and we were laughing and cutting up.  I was sitting on the floor outside the door and was chatting with her.  As we were heading out, this older lady was coming out a couple doors down and she had tears in her eyes as she said, “I love listening to you two!  I don’t have anyone to do that with now and I really miss my Mother.”  OMG! It broke my heart!

OK, so we had a great time today (as we do every time we go somewhere) and you can see our entire fun trip (about 8:30 am until right at 1 pm. LOL!) in my Google+ photos, by clicking the image below.

Spaghetti Squash-Coconut Custard Pie

Prep Time: 5 minutes

Cook Time: 1 hour

Makes: 8 servings at under 120 calories

Ingredients

    • ½ medium spaghetti squash
    • 1 ½ cups Blue Diamond Original Unsweetened Almond milk
    • 3 tablespoons flour
    • 2 teaspoons baking powder
    • ¼ teaspoon salt
    • ¾ cup Eggbeaters
    • 2 tablespoons light margarine
    • 1 teaspoon vanilla extract
    • 1 teaspoon coconut extract
    • 2 tablespoons grated unsweetened coconut (mixed into other ingredients)
    • 1 cup of canister-style Equal Sucralose
    • 2 tablespoons grated unsweetened coconut (sprinkled on top before baking)
    • Pinch of nutmeg
    • Pinch of cinnamon
    • Fat free Cool Whip

Directions

Cut medium spaghetti squash in half. Microwave one half, face down on microwave-safe plate, for about 8-10 minutes or until completely tender throughout. Save second half for another dish on another day (Just cover with clear wrap and place in fridge until ready to use). Allow cooked squash half to cool a bit. While squash is cooling, mix all other ingredients, except squash, last 2 tablespoons of coconut, nutmeg, and cinnamon together in a large bowl. When squash is cool enough to handle, shred pulp with 2 forks. Stir squash strands into custard mixture, and set aside.

Spray or grease a deep dish 9-10 inch pie plate. Sprinkle corn meal over bottom and sides of greased plate. Pour custard mixture into pie plate over cornmeal. Sprinkle the remaining coconut, nutmeg, and cinnamon on top. Bake at 350F for about 50 minutes or until a knife inserted in the center comes out clean.

Allow to cool. This is absolutely delicious topped with a bit of fat free Cool Whip or fat free Reddi-Wip.

Bread is Better When it is Pizza #EasterMeals #CBias

Oh yeah, you know that looks amazing! Well, I promise you that it was!  I am going to be making this again, but next time I am going to spice things up and replace the tomatoes with pepperoni on half of it so the boys will like it too. They liked it, but only if we pulled “those nasty things” off first. LOL!

I must admit, I have a fairly one track mind when it comes to Walmart.  The stores are just so big that I try not to spend too much time wandering.  I typically go to the the places that hold what is on my list and then fight my way back out.  So, when I have to go get something unusual it is fun for me.  I haven’t spent a bunch of time checking out the bakery breads at Walmart.  I either make my own bread or buy frozen.  Oh man! 

I had so much fun looking at that mark down breads and seeing all of the different Artisan breads like Ecce Panis, that I didn’t want to leave the area!  You will see what I mean if you check out my Google+ Story by clicking the image below:

So, you want to know how to make that nom nom concoction at the top don’t ya’?  It is super easy!

Tomato and Basil Artisan Pizza

Ingredients

  • Bread of Choice
  • 1 container of Philly Cooking Crème Italian Cheese and Herb
  • Package of Shredded Parmesan
  • Package of Mozzarella
  • Tomato, Sliced
  • Fresh Basil, chopped

Directions:

  • Slice bread into 1 1/2 inch thick slices
  • Spread Philly Cooking Crème liberally on one side of each piece
  • Place Tomato Slices on top of crème
  • Sprinkle with basil
  • Top with cheeses – don’t put a ton, just a small amount.  The cream does most of the work and the bread holds it all together
  • Bake at 350° for approximately 10 minutes, or until cheese melt!
  • Enjoy! 

We actually made this as an Appetizer, but it filled us up and we ended up not having the actual meal.
