We always have a great time when we get the entire family together – there’s at least 16 of us, so why wouldn’t we?  Why “at least 16”?  Because we typically have a friend or 9 invited along for whatever reason.  Right now, Easter is tomorrow, so I have been thinking of ways to spice it up a tad!

When you have that many people and they range from 5 through 85, you have to come up with a variety of things to keep everyone entertained, but to help them move out the door at your appointed time. Tee hee!

20 Tips to Spice Up (and cool down) Your Easter Party Gathering!

1.  Sit down with a sheet of paper and plan it all out!  Food, drinks, what each person will bring, start and end time, games, prizes, etc7051590777 ece26a2b3a 10 Tips to Spice Up Your Easter Party! #FarmRichSnacks

2.  Go through your home and decide what can be used or re-used!

3.  Call each person that you are expecting and help them decide on an item to bring.

4.  3 Days before the Easter Party, touch base with everyone one last time to be sure they are coming and bringing whatever they are supposed to bring.

5.  Go back through your planning pages and finalize all details!

6.  Think about all the ages of kids and be sure you have snacks for everyone.  Little ones do great with bite-sized finger foods like Farm Rich Queso Cheese Bites, Baby Carrots, Mini Brownie Bites, and Juice Boxes!

Whew, in addition to heading to the Ballpark twice this week, 2 days of Acrobatics, 1 day of Jazz, and Easter coming, I am also busy here on the blogs and at my home!

#1 – Southern Mom Cooks has been super quite the past few days.  So, I made a fun Easter Week Menu Printable for my readers.  I also have some fun recipes I am wanting to try out and get posted there.  PLUS, I have an Easter Recipe Linky going on!

#2 – Here at 3 Boys and a Dog, I have several reviews and giveaways to get posted this week.  I am also working really hard to get through all the junk in my office so I can figure out what supplies I need.  Oh, I have some more fun Tropicana things coming this week including a giveaway and recipe!  What else? OH!  That’s right!  I am expanding the things I will do for companies and PR!  Oooh, 3 Boys and a Dog is growing up.  We now offer multi-week product promotion packages (includes all 3 of my sites in your campaign!), multi-blogger promotion packages (don’t worry dears, the sign ups sheets for this will be coming VERY soon… I am trying to figure out the best way to do it right now), and Twitter Growth Packages!

Wednesday: Southwestern Cheesy Chicken, Corn, and Spanish Rice

Thursday: Beef Tips in Mushroom Sauce

Friday: Leftovers if we have any, if not Salad and Jerk Chicken Nachos

Saturday: GAME TIME! We will spend all day (Double Header) at the Park.. that means probably leftover burgers or ordering in Pizza.

Sunday: Easter Dinner – not quite sure what all we are having yet. My guess is that we will be having Ham and Potato Salad. Probably Macaroni and Cheese and Greens. Hmm.. oh, I am also sure we will be having deviled eggs and a cake for dessert. Other than that, not really sure.

I love to spend time with my Mother and seeing my friends and relatives lose theirs just makes me appreciate mine all that much more!  On this shopping trip, my Mom was trying on clothes and we were laughing and cutting up.  I was sitting on the floor outside the door and was chatting with her.  As we were heading out, this older lady was coming out a couple doors down and she had tears in her eyes as she said, “I love listening to you two!  I don’t have anyone to do that with now and I really miss my Mother.”  OMG! It broke my heart!

OK, so we had a great time today (as we do every time we go somewhere) and you can see our entire fun trip (about 8:30 am until right at 1 pm. LOL!) in my Google+ photos, by clicking the image below.

Spaghetti Squash-Coconut Custard Pie

Prep Time: 5 minutes

Cook Time: 1 hour

Makes: 8 servings at under 120 calories

Ingredients

    • ½ medium spaghetti squash
    • 1 ½ cups Blue Diamond Original Unsweetened Almond milk
    • 3 tablespoons flour
    • 2 teaspoons baking powder
    • ¼ teaspoon salt
    • ¾ cup Eggbeaters
    • 2 tablespoons light margarine
    • 1 teaspoon vanilla extract
    • 1 teaspoon coconut extract
    • 2 tablespoons grated unsweetened coconut (mixed into other ingredients)
    • 1 cup of canister-style Equal Sucralose
    • 2 tablespoons grated unsweetened coconut (sprinkled on top before baking)
    • Pinch of nutmeg
    • Pinch of cinnamon
    • Fat free Cool Whip

Directions

Cut medium spaghetti squash in half. Microwave one half, face down on microwave-safe plate, for about 8-10 minutes or until completely tender throughout. Save second half for another dish on another day (Just cover with clear wrap and place in fridge until ready to use). Allow cooked squash half to cool a bit. While squash is cooling, mix all other ingredients, except squash, last 2 tablespoons of coconut, nutmeg, and cinnamon together in a large bowl. When squash is cool enough to handle, shred pulp with 2 forks. Stir squash strands into custard mixture, and set aside.

Spray or grease a deep dish 9-10 inch pie plate. Sprinkle corn meal over bottom and sides of greased plate. Pour custard mixture into pie plate over cornmeal. Sprinkle the remaining coconut, nutmeg, and cinnamon on top. Bake at 350F for about 50 minutes or until a knife inserted in the center comes out clean.

Allow to cool. This is absolutely delicious topped with a bit of fat free Cool Whip or fat free Reddi-Wip.

Last week was a flop.  If you follow my Facebook Fan page, you know that Thomas was sick for a few days.  He required a TON of my time… round the clock meds and breathing treatments.  So, we kind of ate on the run most nights.  We didn’t get to go to my husband’s game and pretty much every meal on the menu was skipped.

I was particularly excited about the rice trio, so of course I pulled out my recipes and made the very popular Chicken, Rice and Green Bean Casserole that we love.
