**SCAVENGER HUNT ANSWER IN THIS BLOG POST!**

Happy Monday!  What are your plans for Martin Luther King Day?  I, unfortunately, will be working today… not just on my blog, but also on my house.  My husband has been out of town since Thursday afternoon (hunting) and I have just kind of let the house slide.  He will be home this afternoon and I need to get my house back in shape. :-) On the plus side, all three boys are home to help me out. LOL!

Menu Planning Monday: Bacon Cheddar Meatballs Recipe

This week, over at the deal site, I am telling you about this really neat menu planning service! Everything Thursday morning, you can log into your account and choose from 15 new recipes for the week.  You can sort by type (Kid Friendly Recipes, Simple Gourmet, Super Quick, and more) and make up your approximately $90.00 per week menu plan!

Monday: Quick Lasagna and Classic Italian Salad

Tuesday: Chicken Burgers with Garlic-Rosemary Mayonnaise

Wednesday: Baked Barbeque Chicken

Thursday: Bacon Cheddar Meatballs with Buttermilk Mashed Potatoes

Friday: Chicken Parmigiana

The entire menu plan was made using Relish! this week!

This week, as part of my menu plan, I am sharing one of the recipes from my menu planning session at Relish! this week.  I think my favorite part is that you can change the servings needed to fit your family size!meatballs

Bacon Cheddar Meatballs Recipe

Ingredients

  • Cooking Spray
  • 1 1/2 teaspoons olive oil
  • 6 bacon slices, diced
  • 1 1/2 white onions, finely chopped
  • 3 pounds ground beef
  • 1 1/2 cups shredded cheddar
  • 1 cup breadcrumbs (we like Italian seasoned crumbs)
  • 3 large eggs, lightly beaten
  • Salt and pepper to taste

Directions

1.  Coat a baking dish with cooking spray.  Heat olive oil in a large skillet over medium-high heat, then add bacon and cook for 5 minutes.  Add onion and cook for 3-5 minutes more until bacon is cooked and onion is golden brown.

2.  Remove mixture with a slotted spoon and set aside on a paper towel to drain and cool.  Place ground beef, cheese, breadcrumbs, eggs, salt, and pepper into a large bowl.  Add bacon and onion and mix by hand to combine thoroughly.

3.  Roll mixture into 1 1/2 inch balls and place in a single layer in the baking dish.  Bake at 450 degrees until cooked through and no longer pink in the middle… typically about 20 minutes.  Allow to cool before serving.

Note, within Relish, the recipes also list the nutritional value.

Makes approximately 24 meatballs.

Menu Plan Monday: Calling All Blog and Graphic Designers!

If you make digital graphics, I want you!

I actually make them all the time, but I am kind of on a time crunch and need to be spending time writing as opposed to playing.  Since I pretty much only make buttons and banners for myself, I don’t consider it work for me.  As I said, “For me, it is playing.”  LOL!

So, here’s what I am looking for:

  • A button and banner for my upcoming series Simple Dinner Ideas
  • A banner for my Giveaways Around the Web weekly linky
  • A button and banner for my upcoming 12 Weeks to Goal Series (this is a blogging thing.. spending 12 weeks to reach your goal)

I would love to set up a trade or barter system for them… I am thinking a link within each post that says who made my button/banner so that my readers can get some done, too!  Please email me if you want to work together on a barter system for me some new buttons and banners!

Menu Plan Monday: Simple Dinner Ideas Series Coming Soon!

If you follow my Twitter feed, then you have seen me mention this Simple Dinners Series that is coming in 2012.  This week, my menu plan on my deals site has the schedule.  I am so excited about this and have contacted quite a few really big names to work with us on giveaways.

We will have a linky each month and ask that you add it to your plans to come join us and visit the other players.  Moms struggle each day to find great meals and simplify the meal planning process, Crystal and Company and myself are hoping to help you solve these worries and difficulties.  Not only will we be explaining what we do, but we will be talking about products that we use to help us!  Some months we will be sharing our recipes and we hope to have giveaways to help you each week.

Tuesday: Kelli’s Spaghetti (still haven’t made it – long story there about sending my husband to the store for hamburger meat and him not getting any… 3 trips to the tore and several hundred dollars later we still didn’t have hamburger meat.  LOL!  I finally bought some last night.)

Wednesday: Leftovers

Thursday: Busy Day BBQ Meatballs and Potato Salad

Friday: Leftovers – I will be getting ready for Christmas Eve.

Saturday:  Christmas Eve – I will be making Chili for Family, Fun, and Fun at Mom’s.

Sunday:  Christmas Dinner at my In-Law’s.  I don’t know what I am supposed to bring.  Guess I need to call her, huh?  Adding another item to my to do list!
