Chocolate Covered Cherries Recipe

When you’re starting to make these chocolate covered cherries, you want to be certain that you’re drying off any of the cherry juice on the outside of them cherries. You really need that fondant to stick well and hold tight so that the semi sweet chocolate chip has something to hold on to.

The last thing that you need is a dessert fail, right? (and even if you do, you can just start over and try again!)

What my boys love about this recipe is that they’re bite-sized and easy to grab one (or 6!) as they walk past. I swear that I can’t keep them on the plate any longer than about 2 seconds before they’re gone.

Can you use other types of melted chocolate for this recipe?

While we’ve always used milk chocolate, you can certainly make this recipe using dark chocolate or white chocolate as well. In fact, it’s an easy way to change up the flavors of this yummy dessert!

Just use your double boiler to get the chocolate good and melted!

You can make this cordial recipe for special occasions, or give this homemade candy as great holiday gifts. The fun part about homemade cordials is that they’re perfect for Valentine’s Day, Christmas, and more! 

Any time of year is a great time to pull this recipe out of the recipe box. It’s amazing what good mood a cherry center and a small amount of chocolate can put anyone into! 

How do I store leftovers of this cordial chocolate cherries recipe? 

If you’re lucky enough to have leftovers of this cherry recipe, this means that you’ll get to enjoy these sweet cherries over and over again. A tiny bit of leftovers means that you’ll have sweet flavors with fruit centers again.

For the best results, store the leftovers in an airtight container. Once you place cherries in an airtight container, they’ll stay fresh and delicious. This is the easiest way to protect the cherry center and homemade chocolate flavor. Do what you can to protect the good quality and the syrupy cherry flavoring of this sweet candy. 

How long does it take to melt the chocolate under the double boiler?

Not long at all. The main thing to remember is to use a candy thermometer if possible and to keep the melted chocolate under 115 degrees. This will keep it nice and smooth and won’t burn it either.

Cherry Cordials

Yield: 18 cherries
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes

Making these Cherry Cordials is a great and delicious treat.

Ingredients

  • Fresh cherries, pitted and washed
  • 2 cups of sugar
  • 3 tablespoons of butter
  • 1 tablespoon of milk
  • 1 1/4 teaspoon almond extract
  • 1 bag of chocolate chips
  • 1 Hershey bar (optional)
  • 1 teaspoon plain Crisco shortening (optional)

Instructions

    Begin by removing the pits from about 18 cherries. Wash and set aside to let dry. (the stems can. be left on to help with dipping)

    Mix the sugar, butter, milk, and almond extract until it becomes smooth. If it's really sticky, add in a bit of powdered sugar. If you think it's too dry, put in a couple of drops of milk.

    Take and punch off a little bit of the dough and then roll it into a small ball. Next, flatten it out and put your thumb in the center.

    Grab a cherry and put it inside and then mold the dough around it.

    Put the cherries in the freezer for about 15 minutes while you start to melt the chocolate.

    Put all the chocolate chips in a microwave-safe bowl and melt for 30 seconds once time. Then melt in 20-second ingredients and stir so it doesn't burn after each time. (If it's sticky you can add 1 teaspoon of Crisco to help. Don't add water!)

    Dip the cherries into the chocolate using a spoon.

    Take out and place on. waxed paper to let harden. Putting in the fridge can help speed up the process, too.

    Store in a container in the fridge for up to 1 week.
