It’s officially spring and when I think spring, I think bright, fresh and cheerful! What better way to celebrate spring than with this Lemon Cake Bread Machine Recipe.

I love lemon and if you do also, this Lemon Cake Bread will have your mouth watering. It’s perfect for having with your morning coffee and I often like to make an extra loaf or two to share with friends and family as it makes a wonderful homemade gift.

This Lemon Cake Bread is a cinch to make. You can use a boxed lemon cake mix or lemon pudding mix. Either give it that extra burst of lemon goodness. The freshly squeezed lemon juice and grated lemon zest is also a must. This lemon cake is bursting with lemon flavor!

Tips for making Lemon Cake Bread:

I love my bread machine. It is easy to use and I can make a variety of delicious homemade bread recipes including this Lemon Cake Bread all without breaking a sweat.

This homemade cake bread would also be delicious as an orange version, simply substitute orange juice and zest for the lemon, both in the cake and the syrup.

I used lemon cake mix for this recipe. You could also substitute lemon pudding mix but I love using what I have on hand and I never have a shortage of cake mixes.

This recipe makes one cake but it is easy to double to make a second for friends or family and once they taste this you may want to make another to share!

Lemon Cake Bread Machine Recipe

Yield: 12
Prep Time: 10 minutes
Cook Time: 2 hours
: 30 minutes
Total Time: 2 hours 40 minutes

Need a quick dessert for unexpected dinner guests? This one bakes while you eat. Serve with fruit or ice cream.

Ingredients

Lemon Cake

  • 1 package, 18 oz/510 g yellow, golden 1
  • or lemon pudding cake mix
  • 1 cup water 250 mL
  • 3 eggs, lightly beaten 3
  • 1 ⁄3 cup vegetable oil 75 mL
  • 1 tbsp freshly squeezed lemon juice 15 mL
  • 2 tsp grated lemon zest 10 mL

Lemon Syrup

  • 1 ⁄2 cup granulated sugar 125 mL
  • 3 tbsp freshly squeezed lemon juice 45 mL

Instructions

  1. Measure cake ingredients into baking pan in the order recommended by the manufacturer. Insert pan into the oven chamber. Select Cake Cycle.
  2. Halfway through mixing time, using a rubber spatula, scrape down sides of baking pan and kneading blade.
  3. When signal sounds indicating the end of cycle, test for doneness with a wooden skewer. If ready, remove baking pan from bread machine. If not, keep in bread machine on Keep Warm Cycle for 10 to 30 minutes or on Bake Cycle until baked.
  4. Syrup: In a small saucepan over low heat, combine sugar and lemon juice. Heat, stirring constantly, until sugar is dissolved.
  5. With a long wooden skewer, poke several holes through the cake as soon as it is removed from the bread machine. Spoon warm syrup over the hot cake. Set baking pan on a cooling rack for 30 minutes. Turn cake out onto a serving plate and set aside to cool completely.

Notes

Tip: Using a cake mix may seem like “cheating” — but with all the fresh lemon flavor in this recipe, no one will ever know your secret! We always keep a cake mix in the cupboard for emergencies.

Variation: For an orange version of this cake, substitute orange juice and zest for the lemon, both in the cake and the syrup.

This post wraps up my review of the 300 best bread machine recipes cookbook, but that doesn’t wrap up my using it.  It has quickly become my go-to cookbook for breads and my family loves to come home from school (and work) to find the house smelling so yummy!  Really, there isn’t much that smells better than baking bread (or cake) with one of these easy cake mix recipes!
