Busy Day BBQ Meatballs

This is definately a family staple in our house.  If Tripp gets to choose the meal, 9 times out of 10 he asks for Busy Day BBQ Meatballs and My Creamy Potato Salad.

This Mini Meatloaf Bites Recipe is the perfect way to make individual loaves for all to enjoy! I've also included steps for making BBQ meatballs!

Ingredients

Mini Meatloaf Ingredients:

  • 1 pound lean ground beef
  • ½ teaspoon dried parsley flakes
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 finely chopped small onion
  • 2 cloves of minced garlic
  • ¼ cup ketchup plus 2 tablespoons to add later to the top
  • 1 tablespoon Worcestershire sauce
  • 1/3 cup cornmeal
  • 1 egg

BBQ Meatballs Ingredients:

  • 2 pounds of ground beef
  • 1 tsp. Italian Seasoning I use Mrs. Dash
  • 1 egg slightly beaten
  • 1/2 cup bread crumbs (I use Italian flavor)
  • 1/2 cup Ketchup
  • Salt and Pepper to taste

BBQ Meatballs Sauce Ingredients:

  • 1 cup Ketchup
  • 1 TBS Mustard
  • 1 TBS Worcestershire
  • 2 TBS brown sugar
  • salt and pepper to taste

Instructions

Mini Meatloaf Bites

  1. Preheat the oven to 375 degrees. Add non-stick cooking spray to the muffin pan.
  2. Mix all the ingredients in a large mixing bowl. Use your hands to mix well. Separate the meat mixture into six balls of the same size.
  3. Put the balls in the individual muffin cups and press the meat mixture down in the cup.
  4. Add a bit of ketchup to each one, and place the muffin pan in the oven.
  5. Bake for 30 minutes to fully cook the meatloaf.

BBQ Meatballs:

  1. Mix meat ingredients together, shape into 1-inch balls, and place in baking dish.
  2. Mix sauce ingredients and pour over meatballs.
  3. Bake at 350 degrees for about an hour, basting occasionally

These look so good! Do you use lean beef? I'm afraid the fat will pool in the dish.
