Menu Plan Monday: Kid Friendly Meals

One week from today will be Valentine’s Day.  What do you do for it?  We don’t do much, just say “Happy Valentine’s Day, Babe” and give each other a piece or two of candy. LOL!

Last week, I was supposed to be doing some pretty easy meals, and having leftovers a couple times, but the kids devoured supper each night and we had nothing left over! This week, I am just not going to plan on leftovers. If we have some, great.  We can eat them for lunch and snack.

MondayRed Beans and Rice

Tuesday – Boston Butt Roast, Mashed Potatoes, and Gravy

Wednesday – Beef Stroganoff

ThursdayBBQ Pork Chops and Potato Salad

Friday – Frozen Pizzas (we have dance and acro this night, plus Ricky will be gone for all night of baseball… this seems to be the easiest and best thing.  Maybe the little ones and I will do a movie night while Daddy is gone.)

What are you having this week?

We don’t do much for Valentine’s day either. The anniversary of the day we met is Feb 19th so we celebrate that instead. It’ll be 11 years this year!

  3. I don’t know what I’m having alll week yet but I do know I’m having one of our favorites!

    Tortillini soup

    5 cans of chicken broth
1 family package of fresh cheese tortillini
1 10 oz package for frozen chopped Spinach

Heat the broth and spinach and once it’s softly boiling, add tortillini for 7 minutes! Sprinkle with parmesan and salt to taste.

Ohhh, it’s yummy and it’s the only way to get our kids to eat spinach. :)

  7. My girls love a warmed tortilla spread with peanut butter and sliced bananas. It’s super simple to make, relatively inexpensive and fairly nutritious.

  8. My 13-year old and 5-year old daughters love a warmed flour tortilla with peanut butter spread on it and sliced bananas on top. Roll up and keep your fingers out of the way.
