Where am I? I hope everyone had a happy Father’s Day! We spent the first part of the day being super lazy and the second part of the day running from place to place as fast as we could because we decided to go on a mini-vacation! I just came up from the awesome pool at The Grand in Point Clear, AL and am trying to get the post done so I can get some rest before getting up bright and early to go find internet access to actually POST it.
Yeah, no wireless in these rooms! Uggh…

Friday: Lemon Pepper Tuna and Bean Salad – Start to Finish 10 minutes Makes 6 servings
- 1 can (15-ounce) no-salt-added organic navy beans, rinsed and drained
- 3 pouches (4.5 ounces each) Zesty Lemon Pepper Tuna, StarKist Tuna Creations
- 1 cup frozen whole-kernel corn, thawed
- 1 cup peeled, seeded, and chopped cucumber
- 1⁄2 cup fat-free plain yogurt
- 1⁄4 cup finely chopped flat-leaf parsley
- 1 jalapeño chili pepper,* chopped
- Salt
- 9 cups packaged spring salad mix
1. In a large bowl, toss together beans, tuna, corn, cucumber, yogurt, parsley and chili pepper. Season with salt.
2. Divide salad mix among 6 chilled plates. Divide tuna mixture among the plates.
*NOTE: Because chili peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chili peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.

chopped pickles
chopped tomatoes

I like tuna melts
wheat flatbread or deli rounds
12 oz drained tuna
light mayo
chopped onion
swiss cheese-sliced or shredded
diced red and green peppers
Mix mayo and tuna to taste.Place opened round or flatbread on cookie sheet.Top with tuna mixture .Sprinkle with onion and peppers and top woth cheese.Place in over at 350 for 5-7 minutes or until cheese melts.
We eat these open-faced with forks but you can also fold flatbread or add a top to the round for a sandwich.

herbs- you can use basil,oregano, rosemary, any thing you like
1 can drained green beans
1/2 of a finely chopped onion

I have not really expanded my tuna recipies very far beyound a tuna melt.
Mix tuna with mayo, relish and hard bioled eggs, toast bread with a slice of cheese add tuna and ranch dressing and enjoy!

Potato Chip Casserole
1 Bag potato chips, crushed
1 can tuna
1 can cream of mushroom soup
1 can milk
1 can peas
Mix that all together & bake in a 325 oven for half hour, 45 minutes. It sounds odd, I know, but is absolutely delicious!

1/4 cup Green onions, minced, including tops
1/2 cup Sour cream, light
2 (10-12 oz. each) Baking potatoes, medium
1 tsp. Chili powder
