Can you believe it is already March? I have been out of town so much, that I am not prepared to write this menu plan Monday post. But, I have put off the Minute Rice review and my Menu plan long enough. So, for Tackle it Tuesday, I am knocking out 2 birds with one stone.
Monday: Pork Tenderloin and Ranch Mashed Potatoes
Tuesday: Italian Meatloaf and Broccoli Casserole (if I can find a good recipe).
Wednesday: Tex-Mex Bake (new! From Minute Rice cookbook)
Thursday: Leftovers
Friday: Out To Eat
I have been loving my package from Minute Rice! The other day, I took one boneless, skinless chicken tenderloin. I cut it into bite sized pieces and stir-fried it. Then, I added a bit of teriyaki sauce. In the meantime, I took a cup of MINUTE Ready to Serve Yellow Rice Mix and cooked it in the microwave. I mixed the two together and had a great (and super quick) lunch! YUM!

The hardest part for me is sticking to the menu that I made out the previous week!

the worst is making a meal every one likes and getting it all ready at the same time
Planning the menu is about the hardest, with a few picky eaters, it’s hard to plan something everyone will enjoy. Plus the timing, with the kids in different activties after school, it’s hard to get a good routine down.

For me the hardest thing is planning ahead. It is not uncommon for me to realize at 5 o’clock that I forgot to thaw the chicken, or that the steak was supposed to be marinating all day.

The hardest part of dinner time is having it done when my husban gets home. It is usually either not done yet or getting cold.

Hardest thing about dinner time is deciding what I want to make. It’s the same every day… I should really learn to plan ahead…
